The Kšnigsberg MS was preserved in Kšnigsberg (today Kaliningrad) in Baltic East Prussia, though its language and recipe tradition suggest that it belongs to a central or south German background. It is not associated with any name that I am aware of and is dated to the late 15th century purely on paleographic evidence.

[[1]] Von Leberenne ein Gericht:

Nym ein Lebern und hertte Eir, die stoß in einem Morsterstein

und meing daz mitt guttem luttern Wein oder mit Essig und daß soll

man dirchstreichein ader mallenn und nim Zwiffel und sowdt die im

Smalcz. das soll mann giessen uber Fisch ader Wilprett ader Fleisch,

Huner adar worüber du wilst.

 

A dish of liver

Take a liver and hard-boiled eggs, pound it in a mortar and mix it with good clear wine or with vinegar and this should be passed through or ground and take onions and fry them in lard. This should be poured over fish or venison or meat, chicken, or whatever (else) you want.

 

 

[[2]] Eynne Speiße vonn Huneren:

Nym Huner die gebrotenn sein, zulegs nim weiß Brott und mach

ein dunnenn Eirtagk, stoß Saffrann vnd Pf(e)fer imer und daß zusammen

[und] menge es woll im Wasser und nim [ein] Morser mytt fr(i)schenn

Smalltz und stoß das zu Mulle und ebenne es obenn mytt einer Kellenn

und deck es mitt einer Schussell zu und kere den Morser dicke zu dem

Fure, daß er gliche heiß werde und richt das ann in ein Schussell.

 

A dish of chicken

Take fried chickens, /zulegs/ (cut them to pieces?) take white bread and make a thin egg batter. Grind saffron and pepper always (?) and (put it?) together and mix it well in water and take a moprtar with fresh lard and pound it /to mulle/ (as if ground in a mill?) and smooth it on top with a ladle (or strainer?) and cover it with a bowl and place the mortar close by the fire, so that it heats up immediately, and serve it in a bowl.

 

 

[[3]] Gefulte Hechte:

Niem gefuge Hechte und loß die Rindenn dor in zu denn Orenn.

nim Fisch welecherley die sindt und sude sie und leß das Grett, stoß in

einem Morsser, hack dar zu Salbein, Peffer, Komell, Saffran da mitt

sol mann denn Hecht spreingen, Salcz ußwenden und leg in (ihn) uff ein

Rost und brott in jor (gar) schon und nicht zu heiß. auch ma... du

einen auch machenn mytt .......

 

Stuffed pikes

Take /gefuge/ pikes and leave the skin on (?) up to the ears. Then take any kind of fish, whatever they are, boil them and leave the bones (out), chop them with sage, pepper, caraway, and saffron. Fill (?) the pike with this, salt it on the outside and place it on a griiddle to roast it well and not too hot. You also may .... make one with ...

 

 

[[4]] Willtu machenn gehalwirtt Oppffell:

So nim eingerurtte Eir von vyrlei Farbenn, schnede ein Appffell an

einem Virttell und niem aus yedem Theill denn Kerenn und die Scholffenn,

die umb den Kernn ist und ffulle dor ein yede Farb und steck

sye an einen Spressell und zeich sie durch einen dunnenn straubenn

Teick und wan du sie gebeckst, so schneidt sie uff und bestriß

mytt Zucker.

 

If you want to make halved apples

Take stirred (scrambled?) egg of four colours. Then cut an apple into quarters and remove the seeds and the shells that surround them from each part. Fill the hollow with each color and stick the apples back together with wooden splints. Dip them in a thin batter and and whenb you have baken them, cut them open and sprinkle them with sugar.

 

 

[[5]] Willtu ein Galhartt von Fischenn:

so niem einenn Hecht und seudt denn dem woll und loß da von daß

Gebrett und nim Lauck und setz es uff ein (Co)llenn und laß das sidenn

und .... das predt und thu dorein .... und Zucker genunck und

misch es durch ein ander weder zu dyck ader zu din das es sich gissenn

laß. als Lattwergenn thu es uff ein Schussell.

 

If you want to make a jelly of fish

Take a pike and boil it well asnd /loß da von daß Gebrett/ (leave the bones out?) and take leeks and place them on the coals and let it boil and .... the /predt/ and put into it ... and enough sugar and mix it well so that it is neither too thick nor too thin and can be poured. Put it into a bowl like an electuary.

 

 

[[6]] Willthu machenn ein gefullte Leber vonn Eyern:

so niem ein Leber und hacke die gar klein und wirtz sie woll und

niem dann ein heirigenn Speck und Weinber und lege das Netz for dich

und bestreich es wol mytt Eyrthottern und nim dann die Leber und

schlags uff das Netz und schlag ein ander Nez daruber und verspeill

und mitt Petersilge.

 

If you want to make a filled liver with eggs

Take a liver and chop it finely and spice it well, then take fresh bacon and raisins and place the net in front of you and cover it well with egg yolks. Take the liver and put it on the net and place another net around it and tie it up well. Then place it on the griddle and cover it with egg yolks and parsley.

 

 

[[7]] Willthu machenn gutt Wilpratt von Rindtfleisch:

so hack es klein und niem einenn Sweif von einem Kalb und thu denn

in einenn Haffenn und sez es uff ein Collenn und rür es bis es sydenn

würdt, so geus es dan uff das Fleeß. so vecht (?) es die Gestalt alls

Wilpratt und hack darunter Eir und herthes Brott und würtz es woll

abe und mach dann Ballennn [[!Ed]] darauß alls die veist und seidt die inne

einer Fleischprue und schneidt es klein alls das Wilpratt und mach

ein Peffer darzu und würz es woll und lege das Wilpratt darein und

versalcz nicht.

 

If you want to make good venison of beef

Then chop it up small. Take the tail of a calf, put it in a pot, place that on the embers and stir it until boiling, then pour it over the /Fleeß/ (meat?). Thus it /vecht/ (?) the semblance of venison. Chop it with eggs and hard bread, season it well, and form it into balls the size of fists (?). Boil them in broth and cut them up small like venison. Make a pepper sauce and serve the venison in it, and do not oversalt it.

 

 

[[8]] Willthu machenn ein gutts gebackenes von Lungenn:

so hack die Lungen cklein und (tu) ein wintzigk gesettes Specks darunter

und zwenn Eirtoter und gute Wirtz und hack es gar klein und

mach clein Kugl daraus und mach ein guettenn starckenn Teygk und

zeyg die Kugell durch und back es inne Smaltz und versalcz nicht.

 

If you want to make a good baked dish of lung

Chop the lung finely and add a little /gesettes/ (boiled?) bacon, two egg yolks and good spice to it. Chop it finely and form it into small balls. Make a good strong batter and dip the balls in it, then fry them in lard and do not oversalt it.

 

 

[[9]] Grün Sülcz vonn Hünerenn:

so nim Haußenploßenn und seydt die in ir eigenenn Brue und stoß

Pettersylgenn cleinn und nim Essig und Wein wie zu einner anndernn

Sulznn und wurcz sie woll, aber kein Saffran und geuß uber Fleisch

ader waruber du willtt.

 

Green jelly for chicken

Take isinglass and boil it in its own broth. Pound parsley finely and use vinegar and wine, as with any other jelly. Season it well, but do not use saffron. Pour it over meat or whatever (else) you want.

 

 

[[10]] Willthu weiß machen gebrottenn Huner:

so nym das weiß von Eirenn und ein wenig Melles darunter und darmitt

solst dus begissenn und thus dornoch wider zu dem Feuere.

 

If you want to make roast chickens white

Mix egg whites and a little flour and pour it over the chickens, then place them back by the fire.

 

 

[[11]] Zu grunnen Hünerenn:

nim Petterlein, den stos dann inn einem Morsser und ein wennig

Mells und Eyr und bedreff die Huner damitt und legs

denn wider zu dem Feir.

 

To make chickens green

Take parsley, pound it in a mortar, add eggs and a little flour and drip it on the chicken, then place them back by the fire

 

 

[[12]] Zu swarczenn Huner:

nim Leckcochenn und bron denn (bis) er swarz wer, alls ein Pfefferbrott

und stoß dem clein in einem Morsser und schlag Eir darein und

dreib eß mytt durch ein Thuch und begeuß die Hiner damütt und wan

sie gebrotten sein so soll man sie spickenn mitt Neglenn.

 

To make black chickens

Take gingerbread (/Lebkuchen/, a German variant) and brown it until it is black as /Pfefferbrot/, grind it finely in a mortar and add eggs. Pass it through a cloth and pour it over the chickens. When they are roasted they should be cloven (have cloves stuck in them).

 

 

[[13]] Wilthu machen Kungßhuner:

so nim gebrottenn Huner und hacke die zu cleime Stücklenn und nim

frisch Eir und misch die mitt gestossem Imgber, geweß daß

in einem veißenn Morsser, der heiß sey, und thu darzu Saffrann und

salcz ein wenig un(d) thuu eß zu dem Fewer und loß sie backenn.

 

If you want to make /Kungßhuner/

Take fried chickens and chop them finely. Take fresh eggs and mix them with ground ginger. Pour this into a white mortar that must be hot and add a little saffron and salt. Place it by the fire and let it bake.

 

Redaction:

 

450 grammes cooked chicken

4-6 eggs

ginger, saffron, salt

lard or butter

 

Cut or tear the chicken into small pieces. Beat the eggs. Add salt, ginger, and a small pinch of saffron. Place an ovenproof bowl in the oven and heat to 175°C (c. 375°F). Place a small piece of lard or butter in it and let it melt. Spoon the chicken pieces into the bowl, push down with a spoon, then pour the egg batter over it. Bake for 45-60 minutes, until the egg has solidified. Serve not or cold.

(This goes better with something added to freshen the taste, like chopped spring onions. Alternatively, serve it along with pickled gherkins or cucumbers. It doesn't feel as heavy as it is and makes a decent summer lunch)

so nim ein frische Alle und wasche ime abe denn Scleim mitt calter

Eschenn und zeig ime abe die Hautt pis uff denn Zagell. hacke Salbeinn

und Petterleinn und darzu gestossenn Peffer und salcz es zu massenn

wirff eß uff die Elle, zeig die Huott wider doruber, besprengs uswendig

mytt Salcz und brott in schön.

 

If you want to make two eels out of one

Take a fresh eel, wash the slime off with cold ash, and pull off the skin down to the tail. Chop sage and parsely and ground pepper, add salt in measure, and season the eel with it. Pull the skin back over the flesh, sprinkle salt over it and fry it nicely.

 

 

[[15]] Wilthu machenn ein guettenn weyschen Kuchen:

so nim uf zehenn Eyr und zuschlag die woll und nim dorzu Pettersilgenn

und rure eß under ein ander und nyme einenn Morsser vnd

secz in vff ein glutt uundt thu dorein einenn Loffell voll Smalcz und

loß das heyß werden und geweß die Eir dorein und laß es kulle

backenn und richt es dann allso ganz annversalzytt.

 

If you want to make a good /weyschen/ cake

(paralleled in Meister Eberhard as /meyschen/ (May) cake)

take up to ten eggs, break them well, add parsley and stir it all together. Take a mortar, place it on the embers, and put a spoonful of lard in it to heat. Pour the eggs into it and bake it cooly (gently) and serve it, not oversalted.

 

Redaction:

 

10-12 eggs

1 small bunch fresh parseley (or 3 tsp dried)

1 tsp lard or butter

salt and pepper to taste

 

Place lard in a metal or ceramic bowl. Put into in an oven heated to c. 150°C (350°F) until the lard has melted and the bowl is hot. Meanwehile, beat the eggs with the parsley. When the bowl is ready, open the oven door and our the egg batter into the hot bowl quickly. Return to the oven immediately and bake 20-35 minutes (test doneness by inserting a stick or knifeblade). Remove from oven, cool on a wire rack for 10 minutes and turn out onto a plate. Serve sliced for breakfast.

This is also a good way of providing pseudo-scrambled eggs for more people than you have pans or time to make.

 

 

 

[[16]] Wilthu machenn ein Hirßcornn:

item zu der zeytt alls es weig ist so nim das Gehürnn und seidtt das

und mach es sauber und schneidt das zu Scheinenn alls vill du wilst

ader des Gehirns gebinenn magst und nim ein Honeg vnd seudt die

Unsauberlichkeitt davon und nim dan Leckuchen und ßebe in und nim

dan die Peis (?) die du nitt gewinenn canst und hacke die und stoß die

clein unnd nyme ein wenig Honegs und geribenn Leckuchenn und deß

Hirenn Swayß und streich es durch ein Thuch und leg das Gehornn

darein und laß es siedenn.

 

If you want to make hartshorn

 

Take the horn (antlers) when they are soft and boil them and cut them into /Scheinenn/ (strips? slices?) as much as you like or can get of the antler. Take honey and boil the impurities out of it, then take gingerbread and sieve it. The /Peiß/ (?) that you can not get you take and chop finely. Add honey and ground gingerbread and the hart's blood and pass that through a cloth. Place the antler in it and boil it.

 

 

[[17]] Wilthu machenn ein Sulzenn, die dreyerley Gestaltt hatt:

so nim Haueßenn plossenn die verseudtt inn Wasser schonn und nyme

dan dicke Mandell und Petersiligenn und hacke den gar klein un(d) reib

in ein Scherbenn der Mandell Milch und thu dan denn Trithell der Milch

doruntter und zuckers den woll abe, das wirdt ein grüne Varbe und

nyme dan disse zwey Theill (und) seudt inne einer Pffanenn und zucker

es auch abe und loß es sidenn und geueß ein Theill alls weiß uff ein

Pffenlein und mach dann das drytthell gell gleich und geuß und geueß (!)

daß auch uff ein Pffendleinn und laß es dann stenn und seudt und

seudt (!) dann die grin Varbe auch in einer Pffanenn und geuß dann

alls uff ein Pffanenn. also hastu dreuerley Varbe und las eß stein, biß

es hertt wirtt und habe es denne uber das Feuer und zuck es baldt

herabe und sch(l)ag es denn uff ein Panck und schneidt eß dann schagzaglett (?)

und leg es denn uff ein Schussell, ein weill weiß, ein weill

gell, einn grine biß die Schüssell vol(l) wyrtt und versalcz nicht.

 

If you want to make a jelly of three kinds

Take isinglass and boil it in water. Then take a lot of (ground) almond and parsley chopped small, grind the almond milk into a plate, add a third of the milk and sugar it well. That will be green. Then take these (other?) two parts and boil them in a pan, sugar them, let them boil and pour off one part of it onto a pannikin as white. Make the third part yellow and pour and pour (repeated) that into a pannikin, too. Boil and boil (repeated) the green color in a pan, too, and pour all of it into a pan. Thus you have three colors. Let it stand until it hardens, then lift it over the fire, pull it off again quickly and turn it out onto a board. Cut it /schagzaglet/ (chequered i.e. 'like a chessboard'?) and put it into a bowl, once white, then yellow, then green, until it is full. Do not oversalt.

 

[[18]] Wilthu ein gruneß von Huzellen machenn:

so wasche die Huzell gar schone und stos sie clein und streich sie

durch mytt Wein und seidt sye dann woll und thu dan darein guett

Hoengk und wurz genuck und wer es zu din, so reib Prott darein

und thu es in ein Haffenn so bleybett es dir 4 ader 6 wochen guett.

das magst kallt ader warm gebenn und stre(u) Zucker daruff und

Zimettrindenn.

 

If you want to make a green (dish) of pears

Wash the pears nicely and pound them finely. Pass them through a sieve with wine, boil them well and add good honey and enough spices. If it is too thin, add ground breadcrumbs. If you put it into a crockpot, it will last for 4 to 6 weeks. It can be served cold or hot. Sprinkle it with sugar and cinnamon.

 

Redaction:

 

2 lbs pears

1 glass white wine

1/2 cup honey

ginger, cinnamon

 

Wash, quarter and core the pears. Process in a blender or food processor to a puree (adding a little wine where necessary). Place in a pot, adding the remaining wine and the honey. Boil for 10-15 minutes, stirring continuously, until the pear has softened and changed color to a uniform greenish. Season to taste, boil another 10-15 minutes to thicken, and pour into a bowl. Serve sprinkled with cinnamon and sugar.

This is not as good as I hoped, but it's quite edible and faster to make than many others.

nim Fisch und schoppe die und zeich eim abe die Hautt wan er her

walldt, so haue em zu klein Stücklenn, hacke Pettersilge und Salbeinn

dar ein und thu dar zu Peffer, Inber, Zimttrindenn und Saffran, temperer

das woll under ein ander mit Wein und mach ein dünenn Striben (?)

und thu die Fysch darein und geuß denn Wein dar uff und deck es

mytt einem Deyge und mag das umen und umenn gantz und brig obenn

eyn Logh dar ein und mach dar for ein Blezelein von Deyge und las es

vast packenn. also magstu auch von Hunernn, Vogellen, Wilpratt ader

von Fleysche also machenn.

 

A good pastry

Take fish, scale them and skin them /wan er her walldt/ (?) and chop them up fine. Chop parsley and sage into it and add pepper, ginger, cinnamon and saffron. Mix it well with wine and make a thin /striben/ (?), place the fish in there and pour wine over it. Cover it with a crust all around, break a small hole in the top, make a small /Blezelein/ of crust for that and bake it well. You can also make this out of chicken, (other) birds, venison or meat.

 

 

[[20]] Wylthu machen gudtt Morsserkuchenn:

so schneidt Semell gewurfflett und kloppff Eyr clein und thu die Semell

dar unter und schneidt dar unter Musckatt oder Musckattblüde und

mach es gell und schneidt dar under geprottenn Huner ader magst nemen

Lebern und Meglen und Ffusslenn und setz es uff ein Glutt und geuß

dan die Ffull dorein und loß es packenn und gibß hin.

 

If you want to make a good mortar cake

Cut white bread into dice, break eggs into pieces and put the bread into it. Cut nutmeg and mace into it and make it yellow (with saffron). Cut fried chicken into it, though you may also use livers or stomachs or feet. Place it on the embers, pour the filling into it, let it bake and serve it forth.

 

Redaction:

 

200 grammes cooked chicken, torn

300 grammes white bread, cubed

4 eggs

salt, nutmeg, mace

lard or butter

 

Mix the cubed bread and chicken pieces in a bowl. Beat the eggs together and pour over it. Toss. Salt and season with nutmeg and mace to taste. Place an ovenproof bowl in the 180°C (375°F) oven with a a spoonful of lard or butter in it. When it is hot, fill the mixture into it. Bake at 180°C for 30-45 minutes (egg must have become solid throughout). It is a good way of getting rid of leftover chicken and makes a delicious, though high-caloric and rich, winter meal. To modernise the taste, add chopped spring onions, parsley, and a dash of lemon juice.

 

 

[[21]] Wilthu machenn Morsserkochenn:

so reib Semel clein und schlag Eyer doruntter und mach es gell und

wurtz es woll und schneid Musckatten clein dorunder ader Mußkattenblude

und thu ein Smalcz in einenn Morsser und secz in uff ein Gludt

und geuß eß darein und wen es gebeckett, so schneidts zu Scheiben.

 

If you want to make mortar cake

Grind white bread finely, beat eggs into it, make it yellow (with saffron), season it well and cut nutmeg and mace into it. Put lard in a mortar, put it in the embers and pour it in there. When it is baked, cut it in slices.

 

Redaction:

 

300 grammes white bread

3-5 eggs

mace, nutmeg, salt, saffron

lard or butter

 

Process the bread in a food processor or blender until you have fine crumbs. Add the eggs, one by one, until a thick paste results. Season with salt, nutmeg, mace, and saffron. Place an ovenproof bowl in the oven and heat to 175° C (c 375°F). Place a small piece of lard or butter in it and let it melt. Pour the paste into the bowl, smooth the top and bake for 45-60 minutes. Serve hot. It tastes not unlike corn bread, but gets thick and heavy when cold.

 

 

[[22]] Wilthu Prottwirst inn der Fastenn machenn:

so nim gutt Veigenn und überseydt die und stoß die clein und soltst

sie auch vor clein hackenn und leg sye uff ein Prett und nim geriben

Leckogen darunder und welths als langh, als ein Brottwurst ist und

mach ein dickenn Strawbentagk vonn Wein und zeich die Wirst der

dirch und packs dann schonn. gib ein Zucker darzu.

 

If you want to make breaded sausages during Lent

Take good figs and blanch them, cut them small and grind them up. Place the mass on a board, add ground gingerbread (/Lebkuchen/) and roll it out as long as a breaded sausage. Make a thick batter with wine, dip the sausage in it and bake it. Serve with sugar.

 

 

[[23]] Wilthu geprest Sweinßkoppff machenn:

so nim Karppffenn, Schelenn ader Parbenn und schupp sie schön und

mach sie zu Stüczkenn und thu sie in ein Pffanen und geweß dorann

halbß Wasser und halbß Wein, das die Prue einß Fingers lanck uber

die Fisch gee und halt sie uber ein gutt Feuer und loß sie sidenn und

wan sie halp eingesoten sindt, so sengh die Prue abe davonn und nim

die Fysch und thu die Grett dorauß und ... hacks das Geprett clain

ein wenig durch ein ander und thu es wider in die Pfanne und geweß

die Prüe wider daranne und laß es wider ein wenig einsiden und die

Schuppen seudt und streuch sie durch und geuß es als samptt in ein

Hefflen und los eß sten piß (es) herdt (ist), so habe es wider uber das

Feuer und zuck es pald wider herabe und schlag es uff ein Panck

und schneudt es in ein kalte susse Prue jn der Fasten für gepreste

Sweinßkoffpf.

 

If you wish to make pressed pig's head

Take carp, /Schelenn/ and /Parbenn/ (kinds of fish?), scale them well, cut them up small and place them in a pot. Add half wine and half water so that the liquid stands one finger's length above the fish, put them over the fire and boil them. When they are half done (?) take away the broth, take out the fish, remove their bones and .... chop the /geprett/ small. Mix it together, put it back into the pan, pour the broth back into it and let it boil again. Also boil the scales and pass them though a sieve, pour it altogether into a small crockpot and leave it standing until it is hard. Then lift it above the fire again, take it off again soon and turn it out over a board. Cut it into a cold, sweet broth during Lent for (instead of) pressed pig's head.

 

 

[[24a]] Die guette Salcz:

reybe Kloblechauch mitt Salcz, die Heubptt schölle schone und menge

6 Eir darundrer an (=ohne) daß Weyß und ein wenig Wassers darzu,

A good sauce

Grind garlic with salt - the heads should be peeled well - and mix 6 egg yolks and a little water into it. This will be a good sauce.

Then take parsley and vinegar and mix it well.

If you want to make a good sauce

Take shallots and grind them with salt, mix them with wine or vinegar and press out the juice. This sauce is good with beef roasts.

If you want to make a sauce of gingerbread

Cut it up small as /Pfefferbrot/ and boil it with wine. Pass it through a cloth like a pepper sauce and add cinnamon and ginger in sufficiency. Boil it in a pan, pour it into the sauce bowl, and sprinkle sugar on it.

If you want to make pickled cabbage

Boil white cabbage heads, take two parts mustard and one part honey, mix them with wine and add caraway. /einß/ (?) it enough, put the boiled cabbage into it and serve it cold. You can also season the broth and serve it.

so seudt die Eirtotter weig und mach dann inn ein iglichs Ey ein

scheiblichs Lochelein ine die Spizenn und thu denn Totter herauß und

hack Ppetersilienn und reib die Dotter darann und wermß eß inn

Schmalcz und mach es nytt zu hertt und full es wider in die Schalenn

und seudt sye wider und schel sy dann schönn und machs ein guete Prue.

 

If you wish to make large eggs

Boil the egg yolks soft, cut off the tip of each egg and pour out the yolk. Chop parsley, mix it with the yolks, throw it in lard and do not cook it too hard. Fill this back into the shells and boil them well, then shell them and make a good broth (to serve with it).
