Livro de Cozinha

Note- toucinho is available at Portuguese grocery stores, it's basically the skin with fatty layer attached. If you can’t get toucinho, substitute bacon, but try to avoid maple cured or very salty varieties.

 

Flower water is often mentioned as an ingredient. I’m assuming this refers to Orange Flower Water or similar, since Rose Water is specifically called for in later recipes.

 

Erva-doce is aniseed.

 

One more point of clarification, I've translated pasteis as pastries (a very generic word). Modern day pasteis are not flaky, they're more like a sturdy perogie dough, generally fried.

 

It's interesting to note both similarities to the foods I grew up with along with vast differences. Most of our Christmas sweets involve deep frying pastry, then rolling in cinnamon sugar. However, I had never before seen this method used for meats! The saute of certain ingredients to use as a base in dishes is also very familiar. Most of my mother's dishes involved a saute (refegado) of olive oil, onion, garlic, parsely, and sometimes chourica (a type of pork sausage which can be either mild or spicy) instead of the bacon (toucinho).

Meat Dishes

 

Pastéis de carne

Tomem carneiro, alcatra, ou lombo de porco fresco, e uma fatia de toucinho de fumeiro, para dar gosto. Piquem tudo muito bem. Com cravo, açafrão, pimenta, gengibre, coentro seco, caldo de limão ou de agraço, e uma colher de manteiga faz-se o refogado, ao qual se deitam a carne e o toucinho picados. Cozinha-se em fogo brando. Depois de pronto deixa-se esfriar e fazem-se os pastéis, bem recheados; pincele-os com gema de ovo e leve-os a assar em forno quente.

Do mesmo modo se fazem os pastéis de galinha.

Os pastéis ficarão mais gostosos, se recheados com carne crua.

 

Meat Filled Pastries

Take mutton, beef rump roast, or fresh pork loin, and a slice of bacon. Mince well. Saute cloves, saffron, black pepper, ginger, dried cilantro, juice of lemon or unripe grapes, and a spoon of butter, into which you add the minced meat and pork fat. Cook over low heat. After it's cooked, let cool and make the pastries, well filled: brush with egg yolk and bake in a hot oven.

The same method can be used for chicken pastries.

The pastries will be tastier if filled with raw meat.

 

(One thing I'm not absolutely sure about - In modern day usage, CALDO refers to a broth, while SUMO refers to juice. There are modern recipes, such as arroz doce/rice pudding, that call for water in which lemon peel and other spices have been boiled and others that call for lemon juice as part of the marinade. However, since this particular recipe calls for verjuice as an alternative, I'm leaning towards the JUICE option)

Tigelada de perdiz

Parta-se em pedaços uma perdiz mal-assada. À parte, numa caçarola, prepara-se um refogado com azeite ou manteiga, cebola picada, cravo, pimenta e açafrão. Passem-se os pedaços da perdiz na farinha de trigo e em seguida arrumem-se na panela, onde já está o refogado. Toma-se vinagre misturado com água, e deita-se essa mistura na panela, onde já está a perdiz, de modo que atinja o meio do recipiente. Sal a gosto. Leva-se a cozinhar em fogo brando.

 

Partridge Slow Cooked in a Clay Pot

Cut a partially baked partridge into chunks. In a separate pot, prepare the saute with olive oil or butter, minced onion, cloves, black pepper and saffron. Dredge the partridge pieces in the wheat flour, and then arrange in the pan containing the saute. Take vinegar mixed with water, and add this mixture to the pot containing the partridge enough to fill it halfway. Add salt to taste. Cook over low heat

Galinha mourisca

Tome uma galinha crua e faça-a em pedaços. Em seguida prepara-se um refogado com duas colheres de manteiga e uma pequena fatia de toucinho. Deita-se dentro a galinha e deixa-a corar. Cubra-se a galinha com água suficiente para cozê-la, pois não se há de deitar-lhe outra. Estando a galinha quase cozida, tome-se cebola verde, salsa, coentro e hortelã, pica-se tudo bem miudinho e deita-se na panela, com um pouco de caldo de limão. Acabe de cozinhar a galinha muito bem. Tome então fatias de pão e disponha-as no fundo de uma terrina, e derrame sobre elas a galinha.Cubra com gemas escalfadas e polvilhe com canela.

 

Moorish Chicken

Take a raw chicken and cut it into pieces. Then prepare a saute with 2 spoons of butter and a small slice of or bacon. Add the chicken and let brown. Cover the chicken with enough water to cook it, for you will not add more during the cooking. When the chicken is almost cooked, take green onion, parsley, cilantro and mint. Mince them all well and add to the pot, with a little lemon juice. Continue cooking until well done. Then take slices of bread and line the bottom of a clay pot with them and pour the chicken over them. Cover with coddled yolks and sprinkle with with cinnamon.

Galinha albardada

Assa-se uma galinha muito bem e corta-se em pedaços. Passe então os pedaços em ovo batido e leve-os a fritar em manteiga. Tome fatias de pão passadas no ovo e frite-as em manteiga, tal qual a galinha. Passe tudo em açúcar, e arrume numa vasilha, as fatias de pão no fundo. Polvilhe com açúcar e canela.

 

Egg Fried Chicken

Roast a chicken well and cut into pieces. Dredge the pieces in beaten eggs and fry in butter. Take slices of bread dredged in the egg and fry them in butter, just like the chicken. Roll everything in sugar, and arrange in a bowl. Sprinkle with cinnamon and sugar.

Pastéis de tutano

Cozinhem uma dúzia de ovos, de modo que fiquem bem duros. Levem o tutano ao fogo, para uma ligeira fervura. Em seguida corte tudo bem miudinho, as gemas e o tutano, e misture-os com açúcar, canela em pó e sal a gosto. Façam a massa de farinha de trigo, com um pouco de manteiga, e abram-na bem fina. Depois de feitos os pastéis, fritem-nos na manteiga, envolvendo-os em seguida em açúcar. Polvilhe com açúcar e canela.

 

Marrow Pastries

Cook a dozen eggs, so that they become very hard. Take the marrow to the fire, to a light boil. Then mince everything very small, the yolks and the marrow, and mix them with sugar, powdered cinnamon, and salt to taste. Make the dough out of wheat flour, with a little bit of butter, and incorporate it thoroughly. After the pastries are done (filled), fry them in the butter, rolling them afterwards in sugar. Sprinkle with sugar and cinnamon.

Alfitete

Façam uma massa fina com farinha bem peneirada, açúcar e manteiga a gosto, e duas gemas de ovos. Depois de bem sovada, estendam-na com o rolo, e fritem as panquecas em manteiga. Cozinhem muito bem a galinha com manteiga, toucinho, carneiro, e bastante tempero. Depois de bem cozida, desossem a galinha. Em seguida empilhem as panquecas numa vasilha, entremeadas com açúcar. Derramem por cima a galinha e o caldo em que foi cozida. Por fim cubram tudo com gemas de ovos escalfados e polvilhem com açúcar e canela.

 

Meat Filled Pastries

(The modern meaning of Alfiete is closer to a crepe)

Make a fine dough with well sifted flour, sugar and butter to taste, and 2 egg yolks. After it's well kneaded, spread it out with a rolling pin, and fry the pastries in butter. Cook the chicken well with butter, pork belly (or bacon), mutton, and lots of spices. After it's well cooked, debone the chicken. Afterwards, pile the pastries in a bowl, interspersed with sugar. Dump over the top of the chicken and the liquid it was cooked in. To finish, cover everything with coddled egg yolks and sprinkle with sugar and cinnamon.

Sausage Recipes

(note: The only modern Morcelas I'm familiar with are blood sausages, with pork and rice. These don't mention blood anywhere.)

 

Receita n. 1 ( Morcela de Arouca)

Com farinha de rosca, pinhões, amêndoas em pedaços, gema de ovo, banha de porco derretida, calda de açúcar, sal, cravo-da-índia, canela em pó e algumas gotas de água-de-flor façam uma massa e encham com ela as tripas. Em seguida lancem estas na água fervente, até ficarem duras. Ao cozerem-nas, dêem-lhes uns piques com um garfo, para não estourarem.

 

Recipe #1 (Arouca Sausage)

With plain flour, pine nuts, chopped almonds, egg yolk, melted pork fat, sugar syrup, salt, Indian clove, powdered cinnamon and a few drops of flower water make the filling and fill the intestines with it. Afterwards, cast them into boiling water, until they become hard. While they are cooking, prick them with a fork, so that they don't rupture.

Receita n. 2

Piquem miudinho uma arroba de carne de porco, lombo ou pernas; a seguir envolvam-na num pano bem grosso, e deixem-na pendurada dentro de um cesto, com um peso em cima, durante três horas. Misturem 700 gramas de sal fino a 150 gramas de pimenta-do-reino; tirem a carne de seu repouso e lancem-lhe o seu tempero. Juntem tudo muito bem. Se a carne for muito magra, adicionem-lhe um pouco de carne gorda. Encham-se as tripas, e a lingüiça estará pronta.

 

Recipe #2

Mince very well 15 Kilos of pork, loin or leg; afterwards roll it in a very thick cloth, and hang it in a basket, with a weight on top, for 3 hours. Mix 700 grams of fine salt with 150 grams of black pepper; take the meat from it's rest and cast the spices upon it. Mix everything well. If the meat is very lean, add a little bit of fat meat. Fill the intestines, and the sausage will be ready. (Note: an "arroba" is an old weight equivalent to 32 "arrateis". An arratel was equivalent to 16oz or 459g)

Frangos para os hécticos (tísicos)

Criem separados uma dúzia de frangos, cujo único alimento consista de titela de cágado, cozida ou cevada: esse alimento deverá ser sempre fresco. Diariamente cozinhe-se um frango em pouca água, até desmanchar. Em seguida esprema-se a carne, que saia todo o suco; coem o caldo e levem-no novamente à panela com uma colher de açúcar rosado (mascavo). Deixa-se ferver um pouco, coa-se novamente, e estará o caldo pronto.

 

Chicken for Those Suffering from Consumption

(Frango is a young male chicken, grown but not yet a rooster)

Raise seperately a dozen male chickens, whose only feed will consist of the finest meat of freshwater tortoise (turtle): this feed should always be fresh. Each day cook a chicken in a small amount of water, until it falls apart. Afterwards, squeeze the meat, such that you remove all the liquid: strain the broth and return it to the pot with a spoonful of muscovado sugar. Let it boil for a little while, strain again, and the broth will be ready.

Receita dos tutanos

Cozinhe-se, em água e sal, carne de porco bem gorda, tirando-se-lhe em seguida toda a carne magra e as peles. Corta-se então a gordura em pedacinhos, adicionando-lhe, para um arrátel (460 gramas) de gordura, dúzia e meia de gemas de ovos bem duras, em fatias, açúcar à vontade e canela em pó. Prepara-se uma massa de pastel com farinha de trigo bem peneirada, manteiga, sal e água-de-flor. Abra-se essa massa com um rolo, e coloque-lhe seu recheio. Depois de feitos os pastéis, cortem-nos com carretilha, do feitio que se desejar. Os pastéis serão fritos na manteiga e passados depois numa calda de açúcar. Polvilhem com açúcar e canela, e cubram com calda de açúcar e água-de-flor.

 

Marrow Recipe

Cook, in water with salt, fatty pig's meat, afterwards removing all the lean meat and skin. Then cut this fat into little pieces, and add for each pound of fat, a dozen and a half hard egg yolks, sliced, sugar as desired and powdered cinnamon. Prepare a dough for pastries, with well sifted wheat flour, butter, salt and flower water. Roll out the dough and put in the filling. After the pastries are done, cut them with a cutting wheel (the modern ones have decorative wavy edges), in whatever shapes you desire. The pastries are then fried in the butter and dipped in a sugar syrup. Sprinkle with sugar and cinnamon, and cover with a syrup of sugar and flower water.

Piquem bem miudinho carne de carneiro ou de porco, e levem-na a cozinhar com pouca água, um pouco de açúcar e manteiga. Quase cozida lancem-lhe alguns cravos-da-índia. Acabem de cozê-la e retirem-na do seu caldo. À parte batam uma dúzia de ovos, claras separadas, adicionando-lhe um pouco de açúcar. Numa frigideira com manteiga bem quente coloquem a metade dos ovos batidos; deixem-nos tomar consistência, e derramem por cima a carne cozida; logo que os ovos estiverem corados virem tudo num prato. Esquente-se, de novo, manteiga na frigideira, colocando-lhe o resto dos ovos batidos e, por cima, a fritada, tendo o cuidado de não deixar pegar no fundo. Sirva-se polvilhada com açúcar e canela e borrifada com água-de-flor.

 

Torte recipe

Mince well mutton or pork, and cook it with little water, a little sugar and butter. When it’s almost cooked, throw in some cloves. Finish cooking it and remove it from the broth. Aside, beat a dozen eggs, whites separated, adding a little sugar. In a frying pan with very hot butter place half the beaten eggs; let them set, and cast overtop the cooked meat, as soon as the eggs are browned invert all into a plate. Heat, again, butter in the frying pan, adding overtop the rest of the beaten eggs and, overtop, the already fried mixture, taking care to not let it stick to the bottom. Serve sprinkled with sugar and cinnamon and wetted with flower water.

Pastéis de fígado de cabrito

Cozinhem fígado de cabrito e ovos. Amassem tudo muito bem, dos ovos só as gemas, adicionando à mistura cravo-da-índia, canela em pó, e açúcar que adoce. A seguir, tomem as tripas do cabrito, já bem lavadas, cortando-as em pedaços de uns quatro dedos de comprimento, mais ou menos. Recheiem essas tripas com a mistura acima, passem-nas pela farinha de trigo e levem-nas a fritar em gordura bem quente, colocando-as a escorrer, logo após, numa peneira com papel pardo. Por último façam uma calda em ponto alto e passem por ela os canudinhos, que em seguida são postos a secar. Sirvam-se polvilhados com canela.

 

Kid liver pastries

Cook kid liver and eggs. Mix them together very well, from the eggs just the yolks, adding to the mixture clove, powdered cinnamon, and sugar to sweeten. Next, take the intestines of the kid, already well washed, cutting them in pieces four fingers widths long, more or less. Fill those intestines with the above mixture, roll them in the flour and fry them in hot fat, placing them to drain, immediately afterwards. in a sieve with dark paper (Butcher’s Paper?). Lastly, make a sugar syrup to a good height and dip the little tubes in it, that afterwards are left to dry. Serve sprinkled with cinnamon.

Canudos de ovos mexidos

Misturem as gemas de ovos e deitem-nas a cozer em calda rala, sem mexer, para que não se quebrem. Façam uma massa, bem sovada, de farinha de trigo, manteiga, água-de-flor e uma pitada de açafrão. Em seguida abram-no com um rolo, como para pastel, façam os canudos e fritem-nos. Recheiem então os canudos com o doce de ovos já pronto, e passem-nos pela calda de açúcar. Polvilhem com açúcar e canela.

 

Beaten egg tubes

Beat egg yolks and scant syrup (I'm not sure if this refers to the overall amount or to the proportion of sugar to water), without stirring, so they won't break. Make a dough, well kneaded, with wheat flour, butter, flower water and a pinch of salt. Next open it with a rolling pin as for pastries, make the tubes and fry them. Then fill the tubes with the already prepared egg sweet and dip them in the sugar syrup. Sprinkle with sugar and cinnamon.

Lampreia

Limpem a lampreia em água quente, tirando-lhe as vísceras e dando-lhe golpes na carne. Coloquem-na enrolada, numa tigela, e temperem-na com azeite, coentro, salsa, cebola ralada e sal. Deixem-na em repouso por algum tempo, levando-a em seguida ao fogo. Depois de bem refogada, deitem-lhe um pouco d'água com vinagre, cravo, pimenta, açafrão e gengibre. Cozinhem em fogo lento.

 

Lamprey

Clean the lamprey in hot water, removing it's organs and making slits in the meat. Place it coiled, in a bowl, and spice it with olive oil, cilantro, chopped onion and salt. Let it rest for a while, afterwards taking it to the fire. After it is well sauteed, add a little water with vinegar, cloves, black pepper, saffron and ginger. Cook in a slow oven.

Picadinho de carne de vaca

Lavem carne de vaca bem macia, e piquem-na bem miudinha. A seguir adicionem-lhe cravo, açafrão, pimenta, gengibre, cheiro-verde bem cortadinho, cebola batida, vinagre e sal. Refoguem tudo no azeite, e deixem cozinhar até secar a água. Sirvam sobre fatias de pão.

 

Beef mince

Wash the tender cow's meat, and mince it well. Next add cloves, saffron, black pepper, ginger (I've never heard of cheiro-verde, it translate literally as "green-smell") well chopped, crushed onion, vinegar and salt. Sautee everything in the olive oil, and let cook until it the juices dry. Serve over sliced bread.

Galinha desfiada

Limpem uma galinha, e cortem-na em picadinhos. Em seguida levem-na a cozer com toucinho picado, cheiro-verde, e água à vontade. Ao levantar fervura deitem-lhe vinagre e sal. Depois de cozida, que fique com pouco caldo, tirem-lhe todos os ossos, e desfiem-na. Levem a panela novamente ao fogo, adicionando-lhe farinha de rosca. Deixem ferver tudo até engrossar; quebrem dentro 4 gemas e 2 claras; continua-se mexendo; ajuntem então um pouco de cominho, pimenta-do-reino, açafrão, cravo-da-índia e uma colher de banha de porco ou gordura de boi. Sirva-se com canela por cima.

 

Shredded chicken

Clean the chicken and cut it into chunks. Next cook it with minced pork belly (or bacon), cheiro-verde (there's that mystery herb again!), and as much water as you like. When it reaches a boil add vinegar and salt. After it's cooked, that it remains with little broth, remove all the bones, and shred the meat. Take the pot to the fire again, adding cheap flour. Let it boil until it thickens; break and add into it 4 yolks and 2 whites; continue stirring; add then a little cumin, black pepper, saffron, cloves and a spoon of pork or beef fat. Serve with cinnamon on top.

Pastéis de pombinhos

Tomem os pombinhos já limpos e dêem-lhes uns cortes na carne, colocando dentro fatias de toucinho. Temperem-nos a gosto, levando-os ao fogo, a cozer. Façam a massa de pastelão e coloquem dentro os pombinhos, com caldo de vaca, de carneiro ou de galinha, e um pouco de agraço ou caldo de limão. Cubram tudo com a mesma massa do pastelão, e levem ao forno brando.

 

Small pigeon pastries

Take already cleaned small pigeons (inho is a diminutive suffix) and put some slices in the meat, placing slices of bacon inside. Spice it to taste, taking to the fire to cook. Make dough for the large pastries (~ao is a suffix denoting something large) and place the little pigeons inside, with broth from beef, mutton or chicken, and a little verjuice or lemon juice. Cover everything in the pastry dough and cook in a moderate oven.

Pastéis lepaldados

Façam uma massa de farinha de trigo, água e sal, na consistência da massa de pão. Depois de bem sovada, abram-na em folhas redondas, e bem finas, mais ou menos de dois palmos de diâmetro, sem deixar que se quebrem. Tomem então manteiga derretida e untem a folha de massa de um só lado, enrolando-a bem apertada. E assim se procede com toda a massa. Em seguida cortem essa massa enrolada, em fatias de dois dedos de grossura, deitando-as num tabuleiro. Façam então um buraco com os dedos, no meio de cada um desses enrolados de massa, recheando-os com carne picadinha, muito bem temperada, e não muito seca. Cubram com outro enrolado de massa, achatado no meio, e levem ao forno, o suficiente para assar.

Make a dough from wheat flour, water and salt, the consitency of bread dough. After it is well kneaded, roll it out into round leaves, and very thin, more or less two palms (hand widths) in diameter, without breaking them. Then take melted butter and grease the pastry leaf on only one side, rolling it very tightly. And proceed this way with all of the dough. Then cut the rolled dough into slices two fingers wide, putting them in a tray. Then make a hole with your fingers, in the middle of each of those rolls of dough, filling them with minced meat, very well seasoned, and not too dry. Cover with another roll of dough, flattened in the middle, and take them to the oven, enough to bake.

Galinha alardada

Limpe e tempere uma galinha. Em seguida, com auxílio de linha e agulha, envolva-se toda a galinha em fatias de toucinho de fumeiro, bem fininhas. Leva-se ao forno brando.

 

Larded Chicken (alardear modernly boasting, so it's possible the author is implicating it’s just really good)

Clean and season a chicken. Next, with the help of a needle and thread, wrap the whole chicken in very thin slices of smoked pork belly (smoked bacon would probably work here too). Cook in a moderate oven

Galinha cozida e ensopada

Levem a cozer uma galinha temperada com sal, salsa, coentro, hortelã, cebola e um pouco de vinagre. Assim que estiver cozida, retirem-na do seu caldo, o qual é coado e posto a ferver em outra panela. Nesse caldo ponham meia dúzia de ovos batidos, gemas e claras, ao qual se misturam ainda 4 gemas cozidas. Batam tudo muito bem, para que adquira uma certa liga. Ponham a galinha numa travessa funda, sobre fatias de pão, e derramem por cima o caldo de ovos. Coloquem ovos cozidos em volta, e polvilhem com canela.

 

Cooked and soaked chicken

Cook a chicken seasoned with salt, cilantro, mint, onion and a little vinegar. As soon as it's cooked, remove it from it's juices, which are then strained and placed in another pot to boil. In those juices place half a dozen beaten eggs, yolks and whites, to which you add yet another four cooked yolks. Beat everything very well, such that it aquires a certain bond (ie holds together). Put the chicken in a deep serving tray, over bread slices, and pour on the egg broth. Place cooked eggs all around and sprinkle with cinnamon.

Coelho

Assa-se um coelho temperado só com sal, e em seguida cortem-no em pequenos pedaços. Faz-se então um refogado com manteiga, cebola batida, vinagre, cravo-da-índia, açafrão, pimenta-do-reino e gengibre. Ponham em seguida os pedaços do coelho dentro do refogado, e deixem levantar a fervura. Sirva-se sobre fatias de pão.

 

Rabbit

Roast a rabbit seasoned with only salt, and afterwards cut it into small pieces. Make a saute with butter, beaten onion, vinegar, cloves, saffron, black pepper and ginger. Next place the rabbit pieces in the saute, and let the mixture come to a boil. Serve it over bread slices.

Outra receita de galinha mourisca

Façam em pedaços uma galinha bem gorda, e levem-na ao fogo brando, com duas colheres de sopa de gordura, algumas fatias de toucinho, bastante coentro, um punhadinho de salsa, umas folhinhas de hortelã, sal e uma cebola bem grande. Abafem-na e deixem-na dourar, mexendo-a de vez em quando. Em seguida cubram essa galinha com água, e assim que levante fervura acabem de temperá-la com sal, vinagre, cravo-da-índia, açafrão, pimenta-do-reino e gengibre. Logo que a galinha esteja cozida, derramem dentro 4 gemas batidas. Tomem uma travessa funda, forrada com fatias de pão e derramem por cima a galinha.

 

Another recipe for moorish chicken

Cut a very fat chicken into pieces, and cook it over low heat, with two soupspoons of fat, a few slices of bacon, lots of cilantro, a bit of parsley, a few mint leaves, salt and a very large onion. Cover it (? abafar means to stiffle, smother, etc) and let it brown, stirring once in a while. Next cover that chicken in water, and as soon as it reaches a boil finish seasoning it with salt, vinegar, cloves, saffron, black pepper and ginger. When the chicken is cooked, add 4 beaten egg yolks. Take a deep serving tray, lined with bread slices and put the chicken over top. (because this specifies SOUPspoons, I wonder if all the other spoon measurements listed are teaspoons?)

Method of preparing laparo (young male rabbit) - litterally translates as youngish son of rabbit

Take an underbaked young male rabbit and cut it into pieces. Seperately, in a bowl, beat a few eggs, whites and eggs all together, and sugar to sweeten. Almôndegas

Tomem carne de porco ou de carneiro muito gordo, sem ossos, e piquem-na bem miudinha, temperando-a com sal, cravo, açafrão e gengibre. Façam as bolas de carne, recheiem-nas com uma gema cozida, passando-as em seguida pela farinha de trigo. Numa panela com manteiga bem quente ou, se preferirem, manteiga e caldo gordo de carneiro, lancem um amarrado de cheiro-verde, e coloquem ali as almôndegas. Tampem a panela e tenham o cuidado de mexer as almôndegas de vez em quando, evitando que se partam. Sirvam com bastante molho. Se este for pouco, ajuntem às almôndegas o caldo de outras panelas.

 

Hazelnuts (meat balls)

Take very fat pork or mutton, boneless, and mince it very finely, seasoning it with salt, cloves, saffron and ginger. Make it into meatballs, fill them with a cooked egg yolk, rolling them afterwards in wheat flour. In a pot with very hot butter or, if you prefer, butter and fat mutton broth, add a bunch of cheiro-verde (I'm not familiar with this herb, it literally translates as "green smell", and add the "hazelnuts" (meat balls). Close the lid and take care to stir the meatballs once in a while, avoiding breakage. Serve with lots of sauce. If the sauce isn't sufficient, add broth from other pans.

Temperem um coelho a gosto e levem-no a cozer com pedaços de toucinho. Quando estiver bem macio, tirem-no fora, piquem-no e partam o toucinho em talhadas bem finas. Arrumem tudo dentro de uma tigela de barro, entremeando o coelho com o toucinho. Ajuntem cravo-da-índia e uma pitada de açafrão, e cubram com salsa, coentro, hortelã e cebola, tudo bem batidinho. Então derramem dentro o caldo em que o coelho foi cozido e levem a tigela ao fogo. Assim que levantar fervura tirem a tigela do fogo, derramem em cima meia dúzia de ovos batidos, claras e gemas tudo junto, e levem ao forno para corar.

 

Slow Cooked Rabbit (in a clay roaster)

Season a rabbit to taste and cook it with pieces of bacon. When it is very soft, remove it, mince it and cut the pork belly into very thin pieces. Arrange everything in a clay roaster, alternating the rabbit with the bacon. Add Indian cloves and a pinch of saffron, and cover with parsely, cilantro, mint and onion, all well beaten. Then pour on the broth in which the rabbit was cooked and take the pot to the fire. As soon as it reaches a boil, remove the roaster from the fire, break half a dozen beaten eggs over top, whites and yolks all together and take it to the oven to brown.

Batam uma dúzia de ovos, claras separadas, ajuntando-lhe açúcar que adoce. Nesses ovos misturam-se os pedaços de perdiz. Forrem uma terrina com as fatias de pão que estiverem na calda, derramando sobre elas a perdiz com os ovos doces.

 

Partridge Slow Cooked in a Clay Pot (another recipe)

Cook a partridge with a slice of bacon, salt and cheiro-verde (?), having care not to add vinegar. Then cut it into pieces, as for table serving. Make the syrup, not too thick, with 450g of sugar and a few drops of flower water. In that syrup, drop very thin dry bread slices, removing the pot from the fire as soon as it reaches a boil, and returning it to the fire afterwards, until the syrup becomes very thick. Beat a dozen eggs, whites separately, adding sugar to sweeten. Into these eggs add the pieces of partridge. Line a pan with the bread slices from the syrup, pouring over top the partridge with sweet eggs.

Faz-se uma calda rala, com um pouco de água-de-flor, levando-se o tacho ao fogo, para que ferva lentamente. Em seguida colocam-se nessa calda fatias de pão dormido, e assim que estiverem cozidas, retirem-nas e deitem-nas numa travessa. Batam uma dúzia de ovos, e derramem-na na calda. Assim que levantar fervura, comecem a mexer tudo lentamente, sempre para o mesmo lado, a fim de que os ovos não se desfaçam. Depois de cozidos retirem os ovos com uma escumadeira, colocando-os sobre as fatias de pão. Sirvam polvilhados com açúcar e canela.

 

Scrambled Eggs

Make a light syrup, with a little flower water, taking the pot to the fire, so it will simmer. Next add stale (?) bread slices (dormido is sleeping), and as soon as they are cooked, remove them and put them in a serving tray. Beat a dozen eggs, and add them to the syrup. Make a dough as for pastries, with a little sugar and a spoon of butter. After it's very well kneaded, roll it out, on the table. Make the straws whatever size you wish, and fry them lightly in the butter; fill them with the same filling egg sweet from the previous recipe, afterwards dipping them into a thick syrup. Let them dry in a sieve, and then coat them with sugar and cinnamon.

Lacey eggs

Beat 10 egg yolks very well, two whites and two spoons of wheat flour. Grab a small and not very shallow casserole dish, and take it to the fire, with butter to fill it halfway. When the butter is very hot, put the dough in a piping bag, with a very small tip, and squeeze it into the boiling butter, shaping it like lace (or bows). As soon as the dough becomes golden, remove it from the pot and drain it in a sieve. Serve sprinkled with sugar and cinnamon

Façam uma massa de pastel bem sovada, e deixem-na descansar. Tomem marmelos, descasquem-nos e façam-nos em quartos. Cozinhem alguns ovos, até ficarem bem duros, tomem-lhes só as gemas e partam-nas ao meio. Passem uma fervura em alguns tutanos de vaca, e cortem-nos em fatias bem finas. Abram então a massa, bem delgada, e vão-se fazendo os pastéis, colocando-se como recheio, em camadas, açúcar com canela, um quarto de marmelo, meia gema cozida e um pouco de tutano, terminando por uma camada de açúcar e canela, um pouquinho de manteiga e uma pitada de sal. Leva-se ao forno regular: quando os pastéis estiverem meio assados, passa-se um pouco de manteiga sobre eles, borrifando-os em seguida com água-de-flor ou água-de-rosas. Não deixem tostar muito.

 

Quince Pastries

Make a very well kneaded pastry dough, and let it rest. Take quinces, peel them and cut them into quarters. Cook a few eggs, until they are very hard, take just the yolks and cut them in half. Lightly boil a few cow's marrows and cut them into very thin slices. Then roll out the dough very thinly and make the pastries, adding the filling in layers, sugar and cinnamon, a quarter quince, half a cooked egg yolk and a little marrow, ending with a layer of sugar and cinnamon, a little butter and a pinch of salt. Take it to the oven; when the pastries are half baked, spread a little butter overtop, brushing them afterwards with flower water or rosewater. Don't let them brown too much.

Cozinha-se demoradamente um peito de galinha em água pura, de tal modo que se possa desfiar com facilidade. Em seguida coloque esse peito desfiado numa vasilha com água fria. Tomem-se 450 gramas de arroz bem lavado e seco com um pano, pisem-no muito bem, e coem-no numa peneira bem fina. Num tacho deita-se 1,4 litro de leite, adoçando-o com 200 gramas de açúcar. A esse leite ajuntam-se então o peito da galinha, um pouco socado, a farinha de arroz e sal a gosto. Leva-se tudo ao fogo brando, mexendo sem parar. Quando o creme estiver quase cozido, é bom prová-lo, para ver se necessita de mais açúcar. Depois de pronto tira-se o tacho do fogo, continuando-se a bater o creme por mais alguns minutos. Sirva-se em tigelinhas, com açúcar por cima.

 

White Dish

Cook slowly a chicken breast in pure water, such that you can shred it with ease. Next, place the shredded breast in a bowl with cold water. Take 450g of rice, well washed and dried on a towel, pressed down well, and bolt it through a fine sieve. In a pot put 1.4 litres of milk, sweetening it with 200g of sugar. To this milk add the chicken breast, a bit tamped down, the rice flour and salt to taste. Cook it over low heat, stirring constantly. When it is almost cooked, it's wise to taste it, to see if it needs more sugar. After it's ready, remove it from the heat, continuing to beat the cream for a few more minutes. Serve it in little bowls, with sugar on top.

Pastéis de leite

Leve-se ao fogo, a ferver, um tacho com 230 gramas de água. Assim que levantar fervura deitem-se nessa água 230 gramas de leite e 230 de açúcar. Em seguida bate-se uma dúzia de ovos, claras e gemas separadas, adicionando-lhe um pouquinho de farinha de trigo, só para dar liga. Dissolva-se essa mistura num pouco de leite, de modo que fique uma pasta. Derrame-se então tudo naquela calda, que deve estar fervendo. Tira-se do fogo logo que cozinhe. Faz-se uma massa para pastel, que leve açúcar, duas gemas e um pouco de manteiga. Depois de bem sovada fazem-se os pastéis em formas apropriadas e levam-se ao forno, que fiquem não muito assados. Retiram-se logo as formas de dentro dos pastéis, recheando-se estes com o doce de ovos. Em seguida os pastéis são besuntados de manteiga, indo novamente ao forno, para acabar de assar. Esta receita dá para 6 pastelões.

 

Milk pastries

Boil 230g of water in a pot. As soon as it reaches a boil, add 230g of milk and 230g of sugar. Next beat a dozen eggs, whites and yolks separatley, adding a little wheat flour, just enough to make it hold together. Disolve this mixture in a little milk, to make a paste. Then pour everything into the boiling broth. Remove it as soon as it's cooked. Make a pastry dough with sugar, 2 egg yolks and a little butter. After it's well kneaded make the pastries in appropriate shapes and take them to the oven, not letting them bake completely. Remove the molds from inside the pastries, filling the pastries with the sweet egg filling. Next, brush the pastries with butter and put them back in the oven to finish baking. This recipie makes 6 large pastries

Cozinhem um pouco de arroz com leite, açúcar e uma pitada de sal, e ponham-no a esfriar. Batam dois ovos separadamente, adicionem-lhes uma colher de farinha de trigo, misturando-os então ao arroz já frio. Levem ao fogo uma frigideira com manteiga e, quando esta estiver bem quente, deitem-lhe a massa às colheradas. Se os bocados se espalharem muito pela frigideira, enrolem-nos depois na farinha de trigo. Numa panela que já está no fogo, com calda bem grossa, vão-se deitando os bolinhos, que depois são postos a escorrer, numa peneira. Servem-se polvilhados com açúcar e canela. Da mesma maneira se fazem os beilhós de manjar branco, só que este deverá ser mais cozido, usando-se farinha de arroz, em lugar de farinha de trigo.

 

Fried rice balls

Cook a little rice with milk, sugar and a pinch of salt, and set it aside to cool. Beat 2 eggs separately, add to them a spoon of wheat flour, mixing these into the cooled rice. Heat a frying pan with butter, and when it's very hot drop in the batter by spoonfuls. If they flatten out too much in the frying pan, then roll them in the wheat flour. In a pan that's already on the fire with a very thick syrup, add the little balls (as they exit the frying pan), then place the in a sieve to drain. Serve them sprinkled with sugar and cinnamon. In this manner you can also make fried balls of white dish, except that they should be cooked more, using rice flour instead of wheat flour.

 

Notes: This dessert survives in modern cuisine as Filhozes or Filho's - that should read as an accent over the "o", but my keyboard isn't set up properly - a type of deep fried doughnut hole (my mother always made them with pumpkin, but I believe there are other variations). They were a Christmas tradition at our house, along with Coscoro~es, another type of deep fried pastry spinkled with cinnamon sugar.

Tomem então 12 tigelas e ponham nelas essa massa de farinha e ovos, acabando-as de encher com leite cozido. Levem tudo novamente a um alguidar, adicionando 450 gramas de açúcar e uma pitada de sal. Batam muito bem essa mistura. Em seguida untem, com bastante manteiga derretida, as tigelinhas de barro, e encham-nas com a massa já preparada, levando-as logo após a assar. Se diminuírem ao cozer, pode-se tornar a enchê-las. Para saber se a massa está cozida, espeta-se-lhe um palito.

 

Mrs Isalel de Vilhena's milk custards

Beat together 30 eggs. Next, in part of those beaten eggs dissolve 12 spoons of wheat flour, adding that dough to the remaining eggs, beating everything very well. Next take 12 rammekins and place in them the batter of flour and eggs, filling the remaining space with cooked milk. Place everything in a bowl again, adding 450g of sugar and a pinch of salt. Beat the mixture very well. Next grease, with lots of melted butter, the rammekins, and fill them with the prepared batter, immediately afterwards putting them in the oven to bake. If they shrink during baking, you can top them off again. To see if they are ready, prick them with a toothpick.

Almojávenas de D. Isabel de Vilhena

Tomem 3 partes de queijo, não muito fresco, e amassem-nas muito bem, misturando-lhes em seguida uma parte de farinha de trigo e três ovos inteiros; se o queijo for muito mole, misturem a ele as três gemas e apenas uma clara. Mexam e amassem tudo junto, de modo a formar uma pasta homogênea. Façam então uma massa de pastel com farinha bem fina, um pouco de açúcar, manteiga e algumas gotas de água-de-flor. Depois de bem sovada, deixem esta massa descansar um pouco, abrindo-a depois com um rolo, em folhas bem delgadas. Cortem a massa com uma carretilha, dando-lhe feitio arredondado. Com os dedos levantem as pontas da massa, que fique como uma pequena torta. Em seguida arrumem o recheio de queijo nessas tortinhas, que são levadas a fritar em fogo brando, e em bastante manteiga, ou banha bem quente. Tenham o cuidado de não deixar cair a manteiga ou banha dentro do recheio. Assim que estiverem douradas tirem as almojávenas do fogo. Finalmente façam uma calda em ponto não muito alto e, sem deixar que esta ferva, passem por ela as tortinhas. Deixem-nas escorrer numa peneira e sirvam-nas polvilhadas com açúcar.

 

Mrs Isabel de Vilhena's tartlets

Take 3 parts cheese, not too fresh, and crush them very well, adding one part wheat flour and 3 whole eggs; if the cheese is too soft, add 3 yolks and only one white. Mix and incorporate everything together, such that you make a homogeonous paste. Then make a pastry dough with very fine flour, a little sugar, butter and a few drops of flower water. After it's well kneaded, let this dough rest a bit, rolling it out afterwards in very thin sheets. Cut the dough with a decorative cutting wheel, into circles. With your fingers lift the edges of the dough, to shape them like little tarts. Next, put the cheese filling inside those little tartlets, which are then fried over low heat, in lots of butter, or in very hot lard. Take care not to let any butter or lard fall on top of the filling. as soon as they are golden, remove them from the fire. Finally, make a light syrup and, without letting it boil, dip the tartlets into it. Let them drain in a sieve and serve sprinkled with sugar and cinnamon.

Compota de diacidrão

 

Escolham algumas cidras bonitas e perfeitas, que já estejam maduras, e partam-nas em quatro ou oito pedaços, deitando-os imediatamente numa vasilha com água fria. Num tacho ao fogo tenham uma calda bem rala, na qual se arrumam os pedaços de cidra bem apertados, de maneira a ficarem cobertos pela calda. Cubram tudo com um pano ou uma tampa qualquer, e deixem cozer, até que passe pela cidra, com facilidade, um alfinete grosso. Se a calda minguar, acabem de encher o tacho com outra fervendo, e, se ficar escura, passem a cidra para outra calda, também fervente. Depois de bem cozida, tirem a cidra da calda, colocando-a num recipiente com água fria. Repitam essa operação durante quatro dias, três vezes ao dia, isto é, de manhã, de tarde e à noite. No fim desses quatro dias arrumem os pedaços de cidra num tacho, encham-no com água fervendo, cubram-no com um pano e deixem a cidra de infusão. Façam uma outra calda rala, e depois de escorrer a cidra de sua água, deitem-na naquela calda, que deverá estar fervendo. Por quinze dias ande a cidra nessa calda, que deverá levar uma fervura cada dia, e cada vez mais forte. No fim desse tempo a compota estará pronta. Se desejarem-na mais bonita, tirem-na então dessa calda e deitem-na em outra, que levará algumas gotas de água-de-flor e de almíscar. Levem tudo novamente ao fogo, até que a calda fique espelhada. É necessário trazer a fruta bem coberta de calda, para não azedar. Para evitar que tal aconteça, dêem uma fervura na compota, à menor suspeita de deterioração. Se desejarem terminar a compota em oito dias, basta fervê-la duas vezes ao dia. Com qualquer outra fruta usem do mesmo processo. Desejando-se fervê-la de dois em dois dias, deve-se clarificar a calda com clara de ovo, coá-la e derramá-la fervente sobre a fruta. O aparecimento de umas manchas brancas mostra que a fruta começa a azedar. Neste caso retirem a fruta, levando só a calda para ferver, clarificando-a novamente com clara de ovo. Depois de clarificada derramem de novo a calda sobre a fruta. Essa calda terá sempre o ponto espelhado, e deverá cobrir totalmente a fruta.

 

Citrus Peel compote

Select some nice and perfect citrus fruits (I'm not sure if citrus means specifically lemon or orange at this point in time), which are already ripe, and cut them in 4 or 8 pieces, dropping them immediately in a bowl with cold water. In a pot on the fire have a very light syrup, in which you arrange the the citrus pieces very close together, in such a manner that they will be covered by the syrup. Cover everything with a cloth or any kind of lid, and let it cook, until a thick needle will pass through the citrus with ease. If the syrup reduces, finish filling the pot with another (syrup) that is boiling, and, if it darkens, pass the citrus into another syrup, also boiling. After it's well cooked, remove the citrus from the syrup, placing it in a container with cold water. Repeat this operation during 4 days, 3 times a day, that is, in the morning, in the afteroon and at night. At the end of those 4 days arrange the citrus pieces in a pot, fill it with boiling water, cover it with a cloth and let the citron infuse. Make another light syrup, and after draining the citron from it's water, put it in that syrup, which should be boiling. For 15 days leave the citron in that syrup, which should be brought to a boil once each day, and each time stronger (for a longer time / more vigorously?). At the end of that time the compote will be ready. If you wish it to look prettier, remove it from that syrup and place it in another, that has a few drops of flower water and of (almiscar, a perfumed subtance from an asian goat like animal – musk?). Take everything to the fire again, until the syrup become shiny. It is necessary to cover the fruit very well with syrup, so it doesn't spoil. To keep this from happening, bring the compote to a boil at the first sign of deteriorration. If you wish to finish the compote in 8 days, it is sufficient to boil it twice a day. With any other fruit use the same process. If you wish to boil it in 2 days, you should clarify the water with egg white, strain it and pour it boiling over the fruit. The appearance of white spots indicates the fruit has begun to spoil. In this case remove the fruit, taking just the syrup to a boil, clarifing it again with egg white. After it is clarified, pour the syrup over the fruit again. This syrup will always have a shiny appearance and should cover the fruit completely.

Casquinhas

Tomem cidras verdes, partam-nas em quatro ou oito partes e tirem-lhe todo o miolo, que fiquem bem fininhas, colocando-as em seguida numa vasilha com água fria. A seguir dêem uma pequena fervura nas cidras, com um pouco de sal na água, voltando-as em seguida para água fria. Deixem as cascas de infusão durante três dias, trocando-lhes a água duas vezes ao dia. No fim desse tempo levem as cidras a cozer, até que possam ser perfuradas facilmente com um alfinete. Façam uma calda e coloquem dentro as fatias de cidra, de maneira que estas fiquem bem cobertas. Durante nove dias permanecem as fatias nessa calda, e cada dia levam uma fervura. No último, acrescentem algumas gotas de água-de-flor à calda, levando a compota mais uma vez ao fogo, para uma última fervura.

 

Little Peels (inha is a diminutive suffix)

Take green (could also mean unripe) citrons, cut them in four or eight pieces and remove the pulp, that they become very thin, placing them next in a container with cold water. Next, give them a light boil, with a little salt in the water, returning them next to cold water. Leave the little peels to infuse for three days, changing the water twice a day. At the end of this time take the citrons to cook, until they can be easily punctured by a needle. Make a syrup and place inside the slices of citron, in a manner that they become well covered. During nine days remain the slices in that syrup, and the syrup each day is boiled. On the last (day), add a few drops of flower water to the syrup, taking the compote once more to the fire, for the last boiling.

Compota de pêssego

Escolham pêssegos de vez, e os mais duros que se acharem, levando-os ao fogo, em pequenas quantidades, dentro de um tacho com água bem quente, e um pouco de cinza peneirada. Assim que levantar fervura tirem os pêssegos, colocando-os em seguida numa vasilha com água fria. Os que não perderem o pêlo voltam ao fogo para mais uma fervura na água com cinza, indo logo depois para a água fria. Os pêssegos devem ser passados ligeiramente pela água fervente, a fim de evitar que se cozam. Em seguida passem-nos por água fria umas quatro ou cinco vezes, deixando-os descansar um pouco em cada uma delas. Na última dêem-lhes outra fervura, voltando a fruta para outra água fria, que será trocada duas horasdepois. Os pêssegos ficarão em água fria durante dois dias, e essa água será trocada cinco vezes ao dia. E a última levará sempre uma fervura, com os pêssegos dentro. Façam então uma calda em ponto de fio, furem os pêssegos ao comprido, ponham-nos a seguir dentro da calda, e deixem-nos a cozinhar até o ponto desejado. Depois que a compota estiver pronta, acrescentem-lhe algumas gotas de água-de-flor. Ponham tudo dentro do tacho, e durante uns três ou quatro dias dêem uma ligeira fervura na calda, que será derramada nos pêssegos, quando estiver morna.

 

Peach Compote

Select peaches in season (?), and the hardest you can find, taking them to the fire, in small quantities, in a pot with very hot water, and a little sifted ashes. As soon as it reaches a boil, remove the peaches, placing them next in a container with cold water. Those that don't loose their skin return to the fire for another boil in the water with ashes, going immediately afterwards to cold water. The peaches should be dipped quickly throgh the hot water, to the end that they avoid cooking. Next, pass them through cold water another four or five times, letting them rest a bit in each one. In the last give them another boil, returning the fruit to another cold water, that will be changed in two hours. The peaches shall remain in cold water during two days, and that water will be changed five times a day. And the last will have a constant boil, with the peaches inside. Then make a syrup (em ponto de fio litterally means to the point of strings, anybody familiar with modern candying terms?), pierce the peaches lengthwise, put them next in the syrup and let them cook to the desired stage. After the compote is ready, add a few drops of flower water. Put everything in a pot, and during three or four days give the syrup a light boil, which will be poured on the peaches when it is warm.

Doce de limão

Separem alguns limões de casca bem grossa, dêem-lhes um pique numa das pontas e levem-nos a cozer em água com um pouco de cinza. Para saber se estão cozidos, espetem-lhes um alfinete. Coloquem os limões em água fria, limpando-os por dentro ligeiramente, sem abri-los de todo, e jogando-os depois em outra água limpa. Deixem os limões durante três dias em infusão, trocando a água três vezes ao dia. Cada dia dêem-lhes uma fervura, voltando-os sempre para a água fria. No fim desses três dias acabem de limpar os limões, e levem-nos ao fogo para cozerem muito bem, a fim de não encruarem. Por fim façam uma calda e deitem-na fervente sobre os limões, em quantidade bastante para cobri-los. Deixem a fruta nessa calda durante quinze dias, e diariamente dêem uma fervura só na calda. Se esta engrossar muito, antes dos quinze dias, levem-na a ferver com os limões e ajuntem-lhe um pouco de água-de-flor.

 

Lemon dessert

Separate (select) a few lemons with very thick peels, pierce each end and cook them in water with a little ash. To know if they're cooked, pierce them with a needle. Place the lemons in cold water, cleaning them quickly/lightly inside, without opening them completely, and agitating them afterwards in another clean water. Leave the lemons during three days to infuse, changing the water three times a day. Each day give them a boil, returning them always to the cold water. At the end of those three days finish cleaning the lemons, and take them to the fire to cook very well to the end of not letting them get too hard. Finally make a syrup and pour it boiling over the lemons, in sufficient quantity to cover them. Leave the fruit in that syrup for fifteen days and each day give just the syrup a boil. If it is becoming too thick, before the fifteen days, bring it to a boil with the lemons and add a little flower water.

Compota de pêras ou codornos

Separem algumas pêras ou codornos bem bonitos, que não estejam maduros de todo e sem manchas ou ferrugem, e dêem-lhes uns cortes oitavados. À medida que as frutas forem recebendo esses cortes, vão sendo lançadas em água fria. Num tacho ao fogo tenham água fervente, na qual se lançarão as frutas para cozer, tendo antes o cuidado de atravessá-las com um estilete, de ponta a ponta, umas três vezes. Para saber se as frutas estão cozidas, experimentem atravessá-las com um alfinete. Se por acaso a água da cozedura ficar vermelha, tirem as frutas, e coloquem-nas noutro tacho com água fervente, até cabarem de cozer. Em seguida escorram toda a água e deitem as pêras ou codornos numa calda rala, que já estará fervendo. Deixem ferver tudo bastante tempo, tirem do fogo e ponham a esfriar. Durante quinze dias fervam essa calda separadamente, derramando-a fervente sobre as frutas. É bom, de dois em dois dias, clarificar essa calda. No décimo quinto dia deitem na calda algumas gotas de água-de-flor e de almíscar. A compota ficará mais bonita se trocarem a calda em que foi feita por uma nova.

 

Pear or __? compote

Separate (select) very nice pears or ___?, that are not completely ripe and without bruising or "rust", and slice them into eighths. As the fruits are receiving these cuts, cast (the slices) into cold water. In a pot on the fire have boiling water, into which you cast the fruits to cook, first having care to cross (score) them with a stilleto, from end to end, three times. Tomem umas cinco ou seis dúzias de pêras, não muito maduras nem muito verdes, e dêem-lhes uns cortes oitavados, lançando-as imediatamente numa vasilha com água fria. Em seguida ponham água a ferver num tacho, e deitem ali as pêras para cozer, perfurando-as antes ao comprido, duas vezes. Para saber se estão cozidas, espetem-nas com um alfinete. Se caírem, estão boas. Tirem então as pêras da água, e coloquem-nas em uma peneira, abafando-as com panos de cozinha. A seguir façam uma calda em ponto regular, e lancem-na morna sobre as pêras, que já estarão arrumadas num tacho; a calda deve cobrir as pêras, e o tacho há de ficar bem abafado. Durante oito dias seguidos dêem uma fervura na calda, cada dia mais forte, e derramem-na morna sobre as pêras que ficaram no tacho. Usem desse processo por mais sete dias, dia sim, dia não. Se no fim desse tempo a compota não estiver no ponto desejado, continuem fervendo a calda e derramando-a morna sobre as pêras, por mais dois dias. Finalmente levem tudo junto ao fogo, pêras e calda, acrescentem um pouco de água-de-flor, e deixem ferver regularmente por uma meia hora. Separem novamente as pêras de sua calda, a qual, após ser coada, voltará novamente para junto das frutas. Enquanto se fizer a compota, a calda será coada diariamente, antes de se juntar às frutas. E será conveniente clarificar essa calda de dois em dois dias. Se durante o fabrico da compota aparecerem nódoas brancas na calda, levem tudo ao fogo, para uma fervura. Para que as frutas fiquem mais bonitas, cada dia adiciona-se-lhes uma calda nova.

 

Pears (the modern definition I found for dormidiera is: Opium poppy - maybe they're addictive? :-)

Take four or five dozen pears, not too ripe or too green, and slice them into eight, casting them immediately in a container with cold water. Next, boil water in a pot, and put hte pears there to cook, perforating them first lengthwise, twice. To know if they are cooked, pierce them with a pin. If they fall off, they're good (done). Remove then the pears from the water, and place them in a sieve, covering them with kitchen towels. Next make a syrup at normal height (I'm not too familiar with there candying refernces, myself), and cast it warm overtop of the pears, which shall are already be arranged in a pot; the syrup should cover the pears, and the pot should be well covered. During eight consecutive days give the syrup a boil, each day srtonger, and our it warm over the pears that were are left in the pot. Use this process for seven more days, on a day, off a day. If at the end of that time the compote isn't at the desired stage, continue boiling the syrup and and pouringit warm over the pears, for another two days. Finally, take everything to the fire, pears and syrup, add a little flower water, and let it boil evenly for half an hour. Separate again the pears from their syrup, which, after it is strained, shall return to the fruits. While the compote is being made, the syrup shall be strained daily, before adding to the fruits. And it will be convienient to clarify that syrup every two days. If during the manufacture of the compote white spots appaer in the syrup, take everything to the fire, for a boil. For the fruits to look prettier, every day add a fresh syrup.

Doce de abóbora

Arranjem uma abóbora bem dura, e cortem-na em pedaços, do tamanho e feitio que desejarem, descansando-os e limpando muito bem por dentro. Em seguida encham um alguidar com água fria, e derramem dentro uma mão cheia de sal. Antes de mexer o sal que está no fundo, joguem na água um ovo. Quando este vier à tona, que aparecer dele só um pedacinho do tamanho de uma moeda de dez centavos, dissolvam o sal com uma colher de pau. Coem essa salmoura e arrumem-na numa vasilha, com os pedaços da abóbora. Depois de vinte e quatro horas de infusão, tirem os pedaços da abóbora e coloquem-nos imediatamente em água fria, onde permanecerão três dias, com água trocada de cinco a seis vezes ao dia. Depois desse período de infusão na água fria, provem a abóbora. Se ela ainda estiver com gosto de sal, tornem a deitá-la na água por mais três dias, mudem-lhe a água como da vez anterior, dêem-lhe uma fervura cada dia, e voltem a abóbora novamente para a água fria. No terceiro dia acabem de cozê-la completamente, até que passe um alfinete através dos pedaços. Tirem a abóbora da água e deixem-na escorrer muito bem. A seguir arrumem as fatias numa vasilha funda, cobrindo-as com uma calda, mais para rala. Durante quinze dias ficarão os pedaços de abóbora na calda, mas cada dia levar-se-á só a calda ao fogo para ferver, ficando a abóbora, durante esse tempo, abafada numa vasilha com água quente. Na hora de receber a calda escorram muito bem as fatias de abóbora da água quente em que estiveram abafadas. Durante o tempo em que se prepara esse doce deve-se clarificar a calda com clara de ovo, de dois em dois dias, e coá-la diariamente, antes de ajuntá-la à compota. Passados quinze dias o doce estará pronto. E ficará mais bonito, se lhe puserem uma calda nova, no último dia.

 

Pumpkin Compote

Obtain a very hard pumpkin, and cut it into pieces, whatever size and shape you like, peeling and cleaning them very well inside. Next fill a bowl with cold water, and cast in a handful of salt. Before mixing the salt that is on the bottom, add an egg to the water. when this (egg) rises to the surface and all that appears of it is a little piece the size of a 10 centavo coin, dissolve the salt with a wooden spoon. Strain that brine and place it in a container, with the pumpkin pieces. After 24 hours of soaking, remove the pupmkin pieces and immediately place it in cold water, where they will stay for three days, with the water changed five or six times a day.. After that period of soaking, in cold water, taste the pumpkin. If it still tastes salty, once again put it in the water for another three days, changing the water as last time, bring it to a boil eachday, and return the pumpkin to cold water. On the third day, finish cooking it completely, until a pin can completely pierce the pieces. Remove the pumpkin from the water and let it dry very well. Next arrange the pieces in a deep container, coverin them with syrup, more on the thin side. During 15 days the pumpkin pieces shall remain in the syrup, but each day take just the syrup to the fire to boil, leaving the pumpkin during this time, covered in a container with hot water. At the time of returning the syrup to them, dry the pumpkin pieces very well from the hot water in which they were covered. During the time in which this sweet is prepared, the syrup should be clarified with egg white, every two days, and strain it daily, before adding it to the compote. After 15 days the compote will be ready. And it will look prettier if you add a fresh syrup on the last day.

Talos de alface

Escolham talos de alface bem compridos e duros, e limpem-nos cuidadosamente, tirando-lhes todas as fibras. Depois de todos bem limpos, tomem os mais grossos e deitem-nos numa vasilha com água fria. Ponham no fogo um tacho com água, e quando esta ferver, lancem dentro os talos, deixando-os cozer, até que sejam atravessados facilmente com um alfinete. Em seguida escorram os talos da água em que foram cozidos, coloquem-nos num tacho e deitem sobre eles uma calda fervente. Durante quinze dias fervam essa calda separadamente, e derramem-na, ainda fervendo, sobre os talos. No fim desse tempo a compota estará pronta.

 

Lettuce Stalks

Coose lettuce stalks taht are very long and hard, and clean them carefully, removing all their fibers. After they are very clean, take the thicker ones and put them in a container with cold water. Put a pot of water on the fire, and when it is boiling, cast in the stalks, letting them cook, until they can be pierced through with a pin. Next, dry the stalks from the water in which they were cooked, place them in a pot and pour over them a boiling syrup. During 15 days boil this syrup seperately, and pou it, still boiling, over the stalks. At the end of that time, the compote shall be ready

Diacidrão cristalizado

Escolham cidras bem bonitas e perfeitas, partam-nas em 4 partes, e dêem alguns cortes oitavados nas fatias. Em seguida passem a fruta por duas águas bem quentes, enxuguem-na com um pano e ponham-na numa peneira, a secar ao sol. Façam uma calda, não muito grossa, e, quando esta estiver fervendo, deitem nela as fatias de cidra. Deixem o tacho em fogo brando, até que a calda atinja o ponto de bala. Aí, tirem o tacho do fogo, ponham de lado os pedaços da cidra, e batam a calda, até engrossar um pouco. Voltem a cidra para essa calda grossa, e tirem-na rapidamente, deixando-a esfriar fora da calda. Se a fruta pegar na mão, depois de fria, deverá voltar novamente ao fogo, até engrossar o ponto da calda. Depois de prontas, coloquem as fatias a escorrer numa peneira, deixando-as secar fora do sol e do vento.

 

Candied citron

Choose very pretty and perfect citrons, cut them into four, and cut each slice into eight pieces. Next pass the fruit through two very hot water baths, dry it with a towel ans place it in a sieve, drying in the sun. Make a syrup, not too thick, and when it is boiling, pour in the citron slices. Leave the pot on low heat, unit the syrup reaches the point of (boiling?). There, remove the pot from the fire, set aside the citron pieces and beat the syrup, until it thickens a bit. Return the citron to that thick syrup, and remove it quickly, letting it cool outside the syrup. if the fruit sticks to your hand, after it's cold, it should return to the fire, until the syrup thickens. After they are done, place them in a sieve to dry, letting them dry out of the sun and wind.

Doce de flor de laranjeira

Separem flores de laranjeira, bem novas e sadias, e ponham-nas de infusão em água fria, durante vinte e quatro horas. A seguir escorram-lhes toda a água, e ponham as flores num alguidar, de modo que fiquem bem apertadas, e machuquem-nas lentamente. Tirem as flores do alguidar e coloquem-nas em outra vasilha com água fria. Logo que vierem à tona, ponham-nas de novo no alguidar e tornem a machucá-las de leve. Retirem então as flores do alguidar, levando-as para um tacho com água morna, onde ficarão abafadas com um pano. Depois de algum tempo escorram essa água, passem as flores por água fria, e cubram-nas novamente com outra morna. Continuem trocando a água, até que as flores percam totalmente sua acidez. A seguir coloquem as flores numa peneira e deixem-nas secar e esfriar, sempre cobertas com um pano. Façam uma calda de açúcar e acrescentem-lhe uma quantidade de mel de abelha igual a essa calda. Deixem ferver muito bem essa mistura, até que adquira o ponto de mel. Num outro tacho, coloquem seis medidas de calda e três de flor de laranjeira, levando o tacho ao fogo brando e mexendo sempre para o mesmo lado, bem devagar, para que as flores não se desfaçam. Ao mesmo tempo, com uma colher, vão derramando sobre elas um pouco de calda. Durante o cozimento tirem o tacho do fogo umas duas ou três vezes, repondo-o assim que a calda for ficando morna. Para saber se as flores estão cozidas, provem-nas nos dentes. Se não rangerem, estarão boas. Se as flores ficarem muito secas, derramem-lhes mais um pouco de calda de mel e açúcar, antes de cozerem completamente. E, se depois de cozidas, estiverem com muita calda, retirem-lhes um pouco desta. Tudo pronto, deitem o doce numa terrina de louça, e deixem-no esfriar, guardando-o depois em um lugar fresco.

 

Orange flower sweet

Select flowers from orange trees, very new and recently bloomed, and soak them in cold water, during twenty four hours. Next drain all the water, and put the flowres in a basin, in a manner that they become crowded together, and bruise them lightly. Remove the flowers from the basin and place them in another container with cold water. As soon as they rise to the surface, put them again in the basin and again bruise them lightly. Then remove the flowers from the basin, taking them to a pot with warm water, wher they will be covered with a cloth. After a while, drain that water, rinse the flowres through cold water, and cover them again with another warm (water). Continue changing the water, until the flowers completely lose their acidity. Next place the flowers in a sieve and let them dry and cool, always covered by a cloth. Make a syrup of sugar and add an amount of bee honey equal to that syrup. Let that mixture boil very well, until it aquires the point (appearance) of honey. In another pot, place six measures of syrup and three of orange tree flowers, taking the pot to a low fire and stirring always stirring in the same direction, very slowly, so the flowers don't fall apart. At the same time, with a spoon, keep pouring over them a little syrup. During the cooking remove the pot from the fire two or three times, returning it as soo as the syrups starts to get warm (cools down from hot). To know if the flowres are cooked, "taste" them with your teeth. If they don't grind (if they are soft) they are good. If the flowres become too dry, pour on a little more syrup of honey and sugar, before they cook completely. And, if after they are cookedm, they have too much syrup, remove some of this. All done, put the sweet in a pottery terrine, and let it cool, leaving it always in a cool place.

Marmelada de ximenes

Façam uma calda com dois quilos de açúcar. Em seguida pesem dois quilos de marmelo, já descascados e limpos, e ponham-nos na calda, que já estará no fogo. Quando as frutas estiverem cozidas, tirem-nas da calda, amassem-nas, passando-as depois por uma peneira fina. Enquanto isso a calda ficará no fogo, até atingir o ponto de bala. Então, tirem a calda do fogo e adicionem-lhe o marmelo, mexendo tudo durante bastante tempo. A seguir, voltem com o tacho para o fogo brando, continuando a mexer o doce numa só direção, e não em movimentos circulares para não açucarar. Logo que a massa largar do tacho, estará cozida. E, para verificarem melhor se a marmelada está no ponto, tomem um bocado numa colher: se criar uma ligeira crosta por cima, de modo que o dedo não se suje ao tocá-la, estará boa. Se, durante o tempo em que cozerem os marmelos, a calda ficar vermelha, troquem-na por outra. E se desejarem a marmelada vermelha, levem o tacho ao fogo forte.

 

Marmelade of ________

Make a syrup with two kilos of syrup. Next weigh two kilos of quinces, already peeled and cleaned, and put them in the syrup, which is already on the fire. When the fruits are cooked, remove them from the syrup, mash them, putting them afterwards tthrough a fine sieve. When that (is done) the syrup will remain on the fire, until it attains _______ (candying term). then, remove the syrup from the fire and add the quince, mixing for a long time. Next, return the pot to low heat, continuing to stir the sweet only in one direction, and not in circular motions so it doesn't soften (or crystalize, I'm not sure which). As soon as the paste leaves the pot (ie doesn't stick), it is cooked. And, to verify if the marmelade is at the point, take a little on a spoon; if it gets a light skin on top, in the manner that you finger doesn't get dirty when you touch it, it is good. If, during the time that you cook the quinces, the syrups becomes red, replace it with another. And if you desire a red marmelade, take the pot over high heat.

Bocados

Fazem-se os bocados com a mesma marmelada branca da receita anterior, só que menos cozida que aquela. Depois de pronta, coloca-se a marmelada numa terrina, e no dia seguinte fazem-se os bocados. E, tanto na receita anterior, como nesta, podem-se acrescentar uns 50 gramas de água-de-flor ou almiscarada.

 

Bite sized (sweets)

Make the bite sized sweets with the same white marmelade from the previous recipe, except it is less cooked than that one. After it is ready, place the marmelade in a terrine, and the next day make the bite sized sweets. And, in the previous recipe as well as this one, you can add 50 grams of flower water or almiscarada (?).

Para clarificar açúcar

Ponham água num tacho, não em grande quantidade, e lancem dentro clara de ovo em ponto de neve. Em seguida deitem o açúcar no tacho, e levem tudo ao fogo, para ferver, sem mexer. Quando a clara absorver toda a impureza, tirem o tacho do fogo, retirem a clara com uma escumadeira e coem a calda. Depois levem de novo o tacho ao fogo, até a calda atingir o ponto de açúcar. Se não ficar completamente limpo, levem novamente o açúcar ao fogo, com um pouco d'água e outra clara em ponto de neve. O açúcar estará clarificado quando a espuma sair bem alva. Para este processo não há quantidade certa de água. Naturalmente a calda deverá ser grossa, para atingir o ponto de açucarar mais rápido. Mas para 450 gramas de açúcar usam-se duas claras em ponto de neve.

 

To clarify sugar

Put water in a pot, not in great quantity, and cast in egg white in point of snow (beaten to soft peaks?). Next add the sugar to the pot, and take everything to the fire, to boil, without stirring. When the egg white absorbs all the impurities, remove the pot from the fire, remove the egg white with a skimmer and strain the syrup. Afterwards again take the pot to the fire, until it reaches the point of sugar (when the water dries out leaving only sugar?). If it doen't become completely clean, again take the sugar to the fire, with a little water and another egg white in point of snow. The sugar is clarified when the froth (of the egg whites) emerges very white. For this process there is no exact amount of water. Naturally, the surup should be thick, to achieve the point of sugar more quickly. But for 450 grams of sugar use two egg whites in point of snow.

Compota de marmelo

Escolham alguns marmelos alongados, do tipo pêra, bem compridos e lisos, podendo, inclusive, ser marmelos silvestres. Descasquem-nos, partam-nos em quartos, dando-lhes a seguir uns cortes oitavados. Tenham um tacho ao fogo com água fervente, e ponham ali os marmelos, para uma fervura muito rápida. Depois tirem os marmelos dessa água, e coloquem-nos em outra vasilha com água fria. Em água fria ficarão dois dias, trocando-lhes a água três vezes ao dia, e cada dia dando-lhes uma ligeira fervura. A última fervura deverá cozer os marmelos completamente, até que sejam atravessados com um alfinete, com facilidade. Tirem os pedaços dessa última fervura, coloquem-nos numa vasilha funda e cubram-nos com água quente. Depois escorram muito bem essa água e coloquem sobre a fruta uma calda morna, em ponto de fio. Durante quinze dias levem só a calda ao fogo, para uma ligeira fervura, derramando-a sempre morna sobre os marmelos. No derradeiro dia levem tudo junto ao fogo, deixem ferver brandamente, tirem o tacho do fogo e deitem na compota um pouco de água-de-flor.

 

Quince compote

Select a few long quinces, of pear type, very long and smooth, they can include wild quinces. Peel them, cut them in quarters, next slicing them in eigths. Have a pot on the fire with boiling water, and add the quinces, for a very rapid boil. Afterwards remove the quinces from that water, and place them in another container with cold water. In cold water they shall remain for three days, changing the water three times a day, and each day giving them a light boil (boiling them once at low temperature). The last boiling should cook the quinces completely, until they can be pierced with a pin, with ease. Remove the pieces from that final boil, place them in a deep container and cover them with hot water. Next drain that water very well and place over the fruit a warm syrup, at point of threads (candying term).  During fifteen days take just the syrup to the fire, for a ligh bvoil, pouring it always warm over the quinces. On the last day take everything together to the fire, let it boil lightly, remove the pot from the fire and put in the compote a littler flower water.

Perada

Cozinhem com casca 11/2 quilo de pêras, passando-as depois por uma peneira. A seguir façam uma calda em ponto de fio (com um quilo de açúcar), misturem a massa à calda e deixem tomar o ponto. Se quiserem o doce em ponto de compoteira, deixem-no cozer um pouco menos, devendo tirá-lo do fogo um pouco mais mole. Essa mesma receita pode ser feita com partes iguais de marmelos e pêras.

 

Pear Dessert

Cook with their skins 1 ½ Kilograms of pears, straining them afterwards through a sieve. Next make the syrup to the thread stage (with a kilo of sugar), mix (add) the paste to the syrup and let it reach that point (temperature). If you wish the dessert in fashion of compote, let it cook a little less, and you should remove it from the fire a little softer. That same recipe can be made with equal parts of quinces and pears.

Marmelada de D. Joana

Para dois quilos de marmelo, usem 21/2 quilos de açúcar. Cozinhem os marmelos inteiros, só na água, abafando-os bem. A seguir descasquem-nos, cortem-nos em pedaços, passando-os então por uma peneira fina. Pode-se também descascar os marmelos antes de levá-los ao fogo e, nesse caso, serão cozidos com um pouco de açúcar e passados depois pela peneira. Façam uma calda em ponto de espelho, adicionem-lhe um pouco de água-de-flor, deitem dentro os marmelos passados pela peneira e misturem tudo muito bem, fora do fogo. Levem novamente o tacho ao fogo, e mexam a marmelada, até que se desapegue do fundo.

 

D. Joana’s marmelade

For two kilograms of quinces, use 2 ½ kilograms of sugar. Cook the quinces whole, just in the water, covering them well. Next peel them, cut them into pieces, straining them afterwards through a fine sieve. You can also peel the quinces before taking them to the fire and, in that case, they will be cooked with a little sugar and then strained through the sieve. Make a syrup to the mirror stage, add a little flower water, drop in the the quinces strained through the sieve and mix everything very well, off the fire. Take the pot to the fire again, and stir the marmelade, until it releases from the bottom (of the pot).

Alféloas

Façam uma calda com um quilo de açúcar e adicionem-lhe algumas gotas de água-de-flor. Deixem o tacho no fogo, até que a calda atinja o ponto de bala. Para conhecer esse ponto tomem um bastãozinho e introduzam-no na água fria, depois na calda, e novamente na água fria. Se o açúcar se desgarrar do bastãozinho, mantendo sua forma cilíndrica, e cristalizar-se, o ponto já estará bom. Se se tornar difícil essa prova, ponham um pouco de calda na água fria, façam com ela uma bolinha e provem-na com os dentes. Se não agarrar, o ponto está bom. Tenham uma pedra-mármore untada com óleo de flor ou de amêndoas, e derramem a calda rapidamente ali, para não açucarar, e, muito depressa, dêem-lhe umas três ou quatro voltas com uma espátula ou colher de pau. Em seguida, com as duas mãos, estiquem o açúcar o mais possível sobre o mármore, fazendo com ele o movimento de abrir e fechar os braços, bem depressa. Depois de bem esticado, corram a mão pelo açúcar, numa só direção e torçam-no um pouco dando-lhe forma de espiral. É indispensável fazer tudo isso fora de corrente de ar, para que o açúcar não se cristalize antes da operação terminada. Finalmente, estendam um pano úmido sobre uma mesa, e deitem sobre ele a trança de açúcar. Assim que endurecer, cortem-na em pedacinhos.

 

Taffy? Paste of sugar or syrup boiled to thick stage, from which various sweets are made

Make a syrup with a kilogram of sugar and add a few drops of flower water. Leave the pot on the fire, until the syrup reaches the point of boiling. To recognize this point take a tiny bit and introduce it to cold water, then in the syrup, and again in the cold water. If the sugar pulls apart from the tiny bit, maintaining it’s cylindrical form, and crystalizes, the point will be good (reached). If that test proves difficult, put a little syrup in cold water, make with it a little ball and taste (test) it with your teeth. If it doesn’t stick, the point is reached. Take a slab of marble greased with oil of flowers or almonds, and pour the syrup over it quickly, for it not to get sugary (crystalize) and, very quickly, give it three or four turns with a spatula or wooden spoon. Next, with both hands, stretch the sugar as far as possible over the marble, making with it the motion of opening and closing your arms, very quickly. After it is well stretched, run your hand over the paste, in only one direction, and twist it a bit giving it the shape of a spiral. It is necessary to do all that outside the air flow (away from drafts), so the sugar doesn’t crystalize befor the operation is completed. Finally, spread a damp cloth over a table, and place over it the braid of sugar. As soon as it hardens, cut it into little pieces.

Confeitos

Torrem meio quilo de erva-doce e limpem-na numa peneira. Em seguida façam uma calda com quatro quilos de açúcar, levando o tacho ao fogo brando. Quando levantar fervura, que forme pérolas na tona, deitem dentro a erva-doce torrada, conservando o tacho sempre sobre brasas, para que a fervura seja a mais branda possível. Quando estiver quase no ponto do confeito, adicionem um pouco de água-de-flor. É importante nunca deixar o tacho sobre labaredas.

 

Comfits

Toast half a Kilo of anise and clean it in a sieve. Next make a syrup with four kilos of sugar, taking the pot to a slow fire. When it reaches a boil, that forms pearls on top (fine bubbles), add the toasted anise, keeping the pot always over the coals/grills so that the boiling is the gentlest possible. When it is almost at the point of candying, add a little flower water. It is important to never leave the pot over large flames.

Fartes (farto, fartalejo farte, fártel, fartém)

Tomem 7 litros de farinha de trigo e dividam-no em 2 partes iguais. Façam uma presa em cada uma das partes, deitando numa, 1 lata de litro de azeite, e na outra, água quente. Amassem as duas partes separadas, de maneira que as massas fiquem muito bem sovadas, e no ponto de enrolar. A seguir, com cada uma das massas façam biscoitos do tamanho que desejarem, e levem ao fogo para assar, que não fiquem muito corados. Depois moam os biscoitos, passando tudo por uma peneira bem fina. Então, com 7 litros de farinha de trigo, 7 de farinha dos biscoitos e 7 de mel, façam a massa, que servirá para envolver os fartes. Levem 7 litros de mel ao fogo, e assim que levantar fervura ponham no tacho 15 gramas de pimenta-do-reino. Deixem ferver um pouco mais, e comecem a pôr no mel fervente bocados da farinha dos biscoitos, alternados com 450 gramas de erva-doce, também lançada aos bocados. Continuem a pôr a farinha dos biscoitos, até formar uma pasta em ponto de enrolar. Depois de a massa cozida, joguem no tacho 15 gramas de cravo-da-índia e quinze gramas de gengibre, previamente torrados e peneirados, misturando tudo muito bem. A massa estará cozida quando se desapegar das mãos com facilidade. Então, depois de tirada do fogo, é ela colocada num recipiente, onde ficará bem abafada, até ir esfriando.  A seguir tomem a massa feita para envolver os fartes, abram-na, e coloquem dentro o recheio e enrolem-na bem, dando-lhe a forma de pastéis, que são levados ao forno a cozer, de maneira que não se tostem. Os fartes feitos com açúcar levarão metade deste e metade de mel, além de amêndoas ou pinhões, na quantidade desejada. Se usarem amêndoas, coloquem-nas no tacho antes de a massa estar cozida; se usarem pinhões, estes serão postos no recheio na hora de se fazerem os fartes, para cada farte dois pinhões crus. Deve-se notar ainda que a massa do recheio feita com uma parte de açúcar não será tão cozida como a feita só com mel, pois o mel derrama-se com facilidade e o açúcar endurece. Quem fizer a calda com partes iguais de mel e açúcar, deve adicionar à massa também as sobras das farinhas dos biscoitos que ficaram nas peneiras, para obter uma boa liga.

 

Fartes (from farto? Meaning plentiful or in excess)

Take 7 litres of wheat flour and divide it into two equal parts. Make a well in each part, putting in one of them, one 1 litre can of olive oil, and in the other, hot water. Knead the two parts seperately, such that the doughs become very well kneaded, and ready to roll out. Next, with each one of these doughs, manke buiscuits of the size you desire, and take them to the oven to bake, that they do not become too browned. Then grind the biscuits, putting everything through a very fine sieve. Then, with 7 litres of wheat flour, 7 of the biscuit flour andd 7 of honey, make the dough, which will serve to wrap the fartes. Put 7 litres of honey to the fire and as soon as it reaches a boil put in the pot 15 grams of pepper. Let it boil a little more, and start putting bits of the biscuit flour alternating with 450 grams of aniseed, also in pieces, into the boiling honey.  Continue adding biscuit flour , until it forms a paste that can be rolled. After the dough/paste is cooked, throw 15 grams of cloves and 15 grams of ginger, previously dried and sifted,into the pot, mixing everything very well. The dough is ready when it separates from the hands easily (ie- is no longer sticky?). Then, after it’s removed from the fire, it is placed in a receptacle, where it will be well covered until it has cooled. Next take the dough made for wrapping the fartes, roll it out, and place the filling inside and seal them well, giving them the shape of pasteis (rissoles), which are taken to the oven to cook, in a manner that they do not toast (dry out/get dark). Fartes made with sugar take half this quantity of honey, besides almonds or pine nuts, in the desired quantity. If ou use almonds, place them in the pot before the dough/paste is cooked, if you use pine nuts, these may be added to the filling at the hour of making the fartes, for each farte, two raw pine nuts. It should also be noted that the filling made with part sugar should not be cooked as much as that made only of honey, for honey will boil with ease while sugar will harden. Whoever makes the syrup with equal parts honey and sugar, should also add to the mix the leftover biscuit flour that remained in the sieves, to obtain a good cohesiveness.

Biscoitos

Tomem 14 litros de farinha de trigo e façam-lhe duas presas: numa coloquem 1 quilo de açúcar e um pouco de água quente; na outra ponham meio litro de água-de-flor de laranja, um quarto de litro de vinho branco e uma colher de sopa mal cheia de manteiga. Se desejarem usem azeite doce, em lugar de manteiga. Misturem e amassem tudo junto, até a massa ficar bem sovada, e bem macia. Façam os biscoitos e levem-nos a assar em forno quente.

 

Biscuits

Take 14 litres of wheat flour and make two wells in it. In one place a quilo of sugar and a little hot water; in the other put half a litre of orange flower water, a quarter of a litre of white wine and a scant soupspoon of butter. If you wish, you may use sweet olive oil instead of butter. Mix and knead everything together, until the dough is well kneaded, and very soft. Make the buiscuits and take them tobake in a hot oven.

Maçapão

Façam uma calda grossa com um quilo de açúcar e adicionem-lhe algumas gotas de água-de-flor. Quando a calda atingir o ponto de bala mole, juntem-lhe 1 quilo de amêndoas, já antes peladas e pisadas num gral. Para evitar que as amêndoas fiquem muito oleosas, enquanto as pisarem vão molhando a mão do gral em água-de-flor. Logo que misturarem as amêndoas com a calda, tirem o tacho do fogo (mexendo sempre a mistura), acrescentem-lhe uma colher de sopa, mal cheia, de farinha de trigo, e continuem a bater, para que a massa fique bem fofa. Levem o tacho novamente ao fogo. Para saber o ponto de cozimento, tomem um pouco na mão: se estiver bem ligada, a massa já estará cozida. Então tirem o tacho do fogo e ponham a massa numa tigela de louça. Assim que a massa for esfriando, com as mãos molhadas façam os maçapães, do feitio que desejarem.

 

Maçapão (precursor of modern sweets made of flour, eggs, sugar and almonds)

Make a thick syrup with a kilo of sugar and add a few drops of flower water. When the syrup reaches a weak boil, add a kilo of almonds, already peeled and ground in a mortar. To avoid the almonds becoming too oily, while you are grinding them keep whetting the pestle with flower water. As soon as you mix the almonds with the syrup, remove the pot from the fire (continually stirring the mixture), add a scant soupspoon of wheat flour, and continue beating, so that the dough will become very fluffy. Take the pot to the fire again. To recognize the the point at which has cooked, take a little in your hand: if it is very cohesive, the dough is ready. Then take the pot off the fire and place the dogh in a clay bowl. As soon as the dough starts cooling off, with wet hands make the maçapães, in whatever shapes you desire.

Pão-de-ló

Com um quilo de açúcar façam uma calda. Assim que esta espelhar, ajuntem-lhe algumas gotas de água-de-flor e tirem-na do fogo. Pelem um quilo de amêndoas, soquem-nas um pouco, para que fiquem apenas em pedacinhos, e misturem-nas na calda. Mexam tudo durante algum tempo, e a seguir levem o tacho ao fogo brando, mexendo sempre numa só direção. De vez em quando tirem o tacho do fogo, mexendo sempre, para que a massa fique bem alva. Ela estará cozida assim que se desgarrar da vasilha. Despejem a massa num tabuleiro molhado, ou untado com manteiga, alisando-a bem com uma colher de pau, de modo que não fique muito grossa. Cortem-na em tabletes, na forma desejada.

 

Pão-de-ló (modernly refers to sponge cake)

With a kilo of sugar make a syrup. As soon as it becomes mirror-like (a candying term, I presume), add a few drops of flower water and remove it from the fire. Peel a kilo of almonds, mash them a bit, so that they are only made into pieces (as opposed to ground fine?), and mix them into the syrup. Stir everything during some time, and next take the pot to a low fire, stirring constantly in only one direction. Once in a while take the pot off the fire, always stirring, so the dough will be very white. It will be cooked as soon as it comes away from the sides of the pan. Empty the dough onto a wet platter, or one thast has been greased with butter, speading it with wooden spoon in a manner that it won't be too thick. Cut it into little pieces, in the desired shapes.

Pessegada

Cortem ao meio duas partes de pêssego e uma de marmelo, e levem-nas a cozer, em separado. Depois que estiverem cozidas, passem tudo por uma peneira fina. A seguir, ajuntem tanto açúcar quanto for o peso da massa, e levem o tacho ao fogobrando. Deixem atingir o ponto de marmelada, e coloquem o doce em caixetas.

 

Peach Marmelade

Cut in half two parts of peach and one of quince, and cook them seperately. After they are cooked, put everything through a fine sieve. Next, add a like amount of sugar to the weight of the paste, and take the pot to a low heat. Allow it to reach the point of marmelade, and place the confection in little boxes.

Geléia de marmelo

Tomem partes iguais de suco de marmelo e açúcar, e levem tudo ao fogo, com um pouco de água-de-flor. Deixem o tacho em fogo brando, até a calda adquirir consistência de mel. Guardem em potes de louça ou de vidro.

 

Quince Jelly

Take equal parts of quince juice and sugar, and take everything to the fire, with a little flower water. Leave the pot on low heat, until the syrup reaches the consistency of honey. Store it in jars of clay or glass.
